Nutella-Stuffed Pancakes (Serves 7-8)
Ingredients
• 10-14 tablespoons Nutella
• 1 ½ cups all-purpose flour
• 3 tablespoons granulated sugar
• 1 tablespoon baking powder
• ¼ teaspoon salt
• 1 egg
• 1 teaspoon pure vanilla extract
• 1 cup milk
Directions
1. Line a sheet pan with some parchment paper.
2. Spoon 1 ½ tablespoons of Nutella onto the pan. Spread it out into a
round disc about 2 ½ inches in diameter.
3. Repeat the process, making 7-8 Nutella discs. Place the pan in the
freezer for 15-20 minutes, or until the Nutella is firm and holds its
shape.
4. Pre-heat a large skillet or griddle to medium-low heat.
5. In a medium bowl, whisk the flour, baking powder, sugar, and salt.
Add the egg, milk, and vanilla extract.
6. Mix the pancake batter until fully blended.
7. Spray the preheated skillet or griddle with pan spray, and wipe away
any excess.
8. Pour in a ¼ cup of the pancake batter. Place 1 frozen Nutella disc
into the center of the batter.
9. Top the Nutella disc with enough batter to cover completely. When the
batter starts to bubble, the pancake is ready to be flipped.
10. Flip and cook the pancake for a further 1-2 minutes, or until the
other side is golden. Keep the cooked pancakes warm while preparing the
remaining ones. Serve warm.
