INGREDIENTS
to grind
moong dal ( yellow without skin) 1/2 cup washed and soaked
green chilies 3-4 as per taste
ginger 1" finely chopped
salt to taste
For dough
wheat flour/ atta 2 cups
salt
ajwain 1/2 tsp
oil for frying
METHOD
grind dal with green chilies, ginger to a smooth paste
add flour, salt, ajwain, mix well
then adding water make a stiff dough
roll our puris, using oil on rolling pin and on your rolling board
deep fry in medium hot oil till brown on both sides, drain, serve hot with pickle and curd
ps- I don't use flour to roll out puris as then flour is there in oil, so I always smear little oil on rolling pin and board to roll out puris.
if you want to make it healthier, you can use whole green moong to make the puris, as you get the benefit of more nutrients and fiber too.
You can add some coriander leaves to grind to enrich with more Vitamin C.
