INGREDIENTS
onion 1 finely chopped
carrots 2 small finely chopped ( 1 big)
cucumber 1 medium size peeled and chopped
green chilies or chili pdr. to taste
garlic 3 pearls finely chopped ( optional)
salt to taste
sour curd 1 cup
water 1/2 cup
whole wheat flour / atta about 1 cup +
oil 1 tbsp
baking pdr. 1/2 tsp
ghee/ butter for greasing
cheese spread 2 tbsp
cheese slices 2
METHOD
in a pan, heat oil, garlic fry for 2 minutes, add onion, add wee bit salt, fry till light brown
add carrots, fry for 2-3 minutes, add cucumber, green chilies or chili pdr. and salt for the vegetable
fry for 2-3 minutes on low flame, remove and cool
In a bowl, add curd, beat well, add water beat well, add flour whisking well to avoid any lumps, the batter will be slightly thinner than cake batter , so accordingly add flour or water
then salt , baking pdr., and the vegetables, mix well, add cheese spread, mix well
grease a baking tray with butter/ ghee, pour the batter, cut cheese slices into small bits with your hand and spread all over the batter to cover well, in case it doesn't cover your tray, add 1 more slice of cheese
I baked in normal microwave for 8 minutes on high power. Of course your baking time will depend on the voltage and your microwave. Once done, check by inserting a knife in the centre, if it comes out clean, then let it rest in the microwave for another 2 minutes, then you'll be able to cut into pieces and serve. The cheese had nicely melted on top. Hubby liked it, as we had with our afternoon tea this evening.

ps- as we're adding cheese, add little less salt to the batter. You can add any vegetable you like- can be peas, corn, cauliflower, choice is yours
It can be baked in normal oven at 180 deg. C for about 15-20 minutes, this again depends on the size and power.
