Sweet chili sauce, it's made using dried
chili flakes and is regarded as a sweet condiment that has sour and
spicy notes as well. You can enjoy a variety of things with your
homemade sweet chili sauce such as wontons, egg rolls, chicken wings,
spring rolls, vegetables, steamed dumplings, and more.
Ingredients for Sweet Chili Sauce:
Rice vinegar - 1/2 cup (or white vinegar)
White sugar - 1/2 cup
Water - 1/4 cup
Sherry wine - 2 tbsp
Chili - 1-2 tbsp. (crushed)
Cornstarch - 1 1/2 tbsp. (dissolved in 4 tbs. cold water)
Method of preparing the Sweet Chili Sauce:
In a pot, mix all the ingredients, except for the cornstarch, and bring to a gentle boil.
Lower to a medium heat and let the contents of the pot boil for about 10 minutes, or until the volume is reduced to half.
Lower to a small flame, add the cornstarch and mix until you reach a smooth consistency. Keep mixing for about 2 minutes.
Turn off the heat and adjust the seasoning, add sugar or chili as needed.
The sauce will stay fresh for 2-3 months.
