My husband's Hb has been low since his spinal surgery last year. I thought the best way for him to get the iron is from these dates-nuts- coconut balls. It is easy, quick and I enjoyed making it.
INGREDIENTS
dates de-seeded- 15-20
nuts- almond, walnut, cashew each 2 tbsp roughly
desiccated coconut 2 tbsp
METHOD
microwave high the dates spread in a microwave safe plate for roughly 25-30 seconds
you can smash it with a vegetable masher, or with a thick spoon
You can powder all the nuts together corasely and keep ready
once the dates are well mashed, add the nuts, desiccated coconut, mix well, if need be use your hand.
Roll into small balls, as they're dense in calories, store in an airtight container.
