I love mush melon, but sadly after moving down south, never able to taste the sweet ones like what we used to get back in Delhi. The last one I bought, was promised will be sweet, but sadly even after waiting for 4 days to cut it, it wasn't sweet at all. As mentioned earlier, I hate wasting food, so thought of converting it into a dessert for hubby, who has been asking me like a child, what are you going to make for me, everyday, though he is a diabetic !
INGREDIENTS
musk melon puree 1 cup
milk 300 ml
cooked rice 1 tbsp ( left over)
poppy seeds // kaskas 1 tsp
nuts 2 tbsp
milk powder 2 heaped tbsp
sugar 2 tbsp or to taste
semolina/ suji 1 1/2 tbsp ( optional)
ghee 2 tsp
nuts for decor
METHOD
in a pan/ kadai boil milk with cooked rice, let it simmer till milk has reduced
in a mixer, powder kaskas and nuts fine
add melon, make fine puree
add the melon mixture to the milk, mix well, adding milk powder, keep stirring often, as it will start thickening, if need be add little milk, once melon is cooked, add sugar, keep stirring till sugar gets dissolved and as it gets thick, as I tasted it, found it to be quite sweet, so added semolina, kept stirring well, till it gets cooked.
add 1 tsp ghee, stir well, as it leaves the sides of the pan, add another spoon of ghee, mix well, remove, garnish with nuts, serve hot/ cold.
