As hubby loves raw mango pickle, bought a mango, felt bard and it was green. But, once when I cut it, hubby always loves to taste the mango, he said it is ripe. But, when I tasted it, didn't find it very sweet either.
So, I decided to peel its skin, chop into small pieces, I put it in a micro-safe dish
INGREDIENTS
raw mango almost weighing 400 gm
turmeric pdr. 1/2 tsp
salt 1/2 tsp
white sugar 3 tsp
molasses 6-7 tsp OR you may add brown sugar OR add white sugar only.
chili pdr. 1/2 tsp
water 1/2 cup
Mix it all well with cut mango, micro high for 3 minutes uncovered
remove, mix well, keep for another 3 minutes
remove, you may check for sweetness or want more spice, add now,
mix well, keep for another 3 minutes
you'll find the pieces are cooked, but not too soft
once cool, store in a clean dry container, you can keep it out for 2-3 days, then you need to store in the fridge. Always use a dry spoon to serve.
You can spread it bread toast, have with roti, idli, dosai, adai, today mixed with some red lentil
chundal, gave hubby to taste, he liked it, he wanted me to mix and give him to eat later.
NOTE- You can add the ingredients, add water, mix well, you can cook on gas on low flame, stirring from time to time, cook till soft but not mashy !
