Jakfruit halwa / palapalzha halwa

 A few days back I bought a few cut pieces of jack-fruit, as I'ld not finish all, thought of making halwa, so I can eat little each day.

INGREDIENTS

jack fruit pieces  5

milk 100ml

ragi flour 1/2 cup roughly 

vellam/ jaggery to taste


METHOD

in a microwave safe vessel I added milk, let it boil for 1 minute

then added jack-fruit pieces chopped fine, mixed well

micro high for 90 seconds, mixed well

added ragi flour mixed well with 1/2 cup of water

micro high for  1 minute, take it out, mix well

repeat twice more, then add jaggery, mix well

micro high for 1 minute, mix well

repeat twice more, if it has become thick and well cooked remove

as this depends on the voltage and your microwave power.

you may roast some nuts and raisins and add

I just added some chopped nuts while cooking it itself.

Mixed Millet Roti

 Serves 2-3

Ingredients

1 cup mixed millet flour

Half cup finely chopped onions

Handful of chopped coriander

2-3 green chilies, finely chopped

Half tsp grated ginger

1 cup of mixed chopped greens (spinach, fenugreek, spring onions)

1 tsp salt

2 tsp white sesame seeds

1-2 tbsp ghee to cook

Method

Combine all the ingredients except ghee in a bowl. Use warm water to make a soft dough.

Pat out the dough on a parchment paper or an oiled banana leaf. Transfer the roti by inverting the paper or leaf on a hot lightly greased tawa. Press down using a spatula and gently peel off the paper/leaf. Cook on a medium flame for 4-5 minutes on each side, using a tsp of ghee on each side. Serve hot with a cup of yogurt.

Ragi Ambali

 Serves 2

Ingredients

4 tbsp ragi flour

Half tsp salt

1 cup buttermilk

1 small onion, finely chopped

1-2 green chilies, finely chopped

1 sprig curry leaves

Method

In a small cup, make a slurry of ragi flour with half cup water. Bring 1 cup of water to boil in a pan. Add the slurry and salt with constant stirring. Reduce the heat to low and simmer for 5 minutes until the mixture thickens and the flour is cooked. Whisk in the buttermilk, onions, chilies, and curry leaves. This can be had hot or at room temperature. The porridge will thicken on cooling.
