Shakarpara/ Thekua

Ingredients:
2 cups wheat flour
1/4 cup semolina (suji)
3 tbsp grated dry coconut
1 tsp cardamom powder
1 tsp crushed fennel seeds (saunf)
4 tbsp ghee
3/4 cup sugar  alternately the sugar can be dissolved in warm milk roughly 1/4 cup
Water as required

METHOD

in a big bowl add wheat flour, semolina, grated coconut, fennel seeds, ghee, mix well by rubbing called moin. Then when you take some flour and hold in your hands, it should hold together without crumbling. At this stage add sugar mix well or mentioned above add the sugar milk, then add water if required little by sprinkling. The dough should be like for roti dough.

Either you can roll it out, spread some ghee, fold it from both sides then from top and bottom and roll again, then cut into diamond shape and fry in medium hot oil till golden and crisp.

If you have some mold then you can take a small ball of the dough and press it on the mold and fry. Or you can roll out like roti, cut into oval shape or any other shape cutter you've, then you can make some design with tooth pick on top if you've the time and patience. Anyway, the taste will be the same.
