INGREDIENTS
potatoes boiled and mashed 2 cups
ghee 4 tbsp
sugar 1/2 the quantity of the potatoes once they've browned
nuts 3-4 tbsp chopped
METHOD
in a heavy pan, heat ghee, add potatoes, keep on stirring on medium flame till the sugar of the potatoes comes out, giving it a nice light brown colour.
at this stage add sugar which should be roughly half the quantity of the thickened potatoes.
after adding sugar, as it melts, the mixture will seem watery, keep stirring, adding chopped nuts till it all comes together, as one thick mass, sprinkle some cardamom powder, mix well.
garnish with some chopped nuts and serve hot or cold.
