Medhu vada premix

 Ingredients

Urad dal 1 cup

Salt ¾ tsp or to taste

Baking soda  ½ tsp

Hing little

Method

Heat a pan in low flame, add dal, roast till nice aroma comes, you’ve to keep stirring it, or it will get burnt. Once the dal gets light brown colour, spread in a plate to cool down.

When dal has cooled down, powder fine in a mixer jar. Now add rest of the ingredients, mix well and store in an air tight container. It will last for 3-4 months.

 

Now using premix making vada

Ingredients

Premix 1 cup

Finely chopped onion 1-2 tbsp

Ginger finely chopped 1 tsp

Green chilies finely chopped to taste

Curry leaves finely chopped 2 tbsp

Water 1 cup

 

Method

Mix the ingredients  well adding water for 5-6 minutes, like beating the batter for the cake, as it will incorporate air and become light and fluffy. If need be add another 1-2 tbsp of water

Wet your hands, take big lemon size batter, put it on your palm, flatten it, make a hole in the center, slip it slowly in hot oil, be careful not to burn your hands.

Fry the vadas on medium hot flame till they’re brown and crisp, drain well, put on kitchen towel, to remove excess oil,  serve hot oil coconut chutney and sambar.
