Apple-Mango cobbler

I cut an apple, it was soft, hubby doesn't like soft apples to eat. I cut a mango, but sad it wasn't fully ripe, so not so sweet !
After cutting the apple, I added wee bit water, powdered gur/ molasses about 2 tsp,  little cinnamon pdr. , put in a microwave safe dish covered and cooked for 2 minutes. stirred and cooked for another 2 minutes.
In the mean time, cut mango, then thought why not add mango to apple to make cobbler. So, added the mango, about 2 tsp gut pdr, mixed well.

For topping
I love more topping, so about 1/2 cup of maida/ all purpose flour, 3 tsp butter, little salt, 3 tsp of pdr. gur/ sugar, mixed well, sprinkled on top of the fruits to cover it well, it was crumbly, then on grill + micro combo kept for 3 minutes, then kept the grill plate and kept the dish on top, changed to grill mode for 2 minutes. Saw the top had become brown. So, how long it will take depends on the voltage, your microwave power.

Cheesy veg puffs

 ready to eat
 filling with cheese

INGREDIENTS
white sauce  1 1/2 tbsp ( had cheese)
maida/ all purpose flour about 1/2 cup
salt little
butter 1 tbsp
oil for shallow fry
stuffing
I had some left over veges which I had made for pasta, so wanted to use it, 

METHOD
in the white sauce, I added flour, mixed well, then added little salt, added about 1/2 cup + I didn't add any water, made a stiff dough, adding about 1 tbsp butter

I rolled into small puri, for the first made 2 small puris, on one put some stuffing, put some cheese pieces, covered with another puri, sealed the edges with a fork,
heated 1 tsp oil in a pan/ kadai, once hot, add the prepared puff, fry on medium flame till golden on both sides, adding little oil if needed. 
2nd one, made a bigger puri, put stuffing on one half, folded it to form a crescent, sealed and fried.


NOTES
you may use any left over veges you've or you can fry some onion, beans, potato, peas, cauliflower or whatever you've. If you feel like adding cheese, I added normal cheese slice only, or you may add paneer if you've. Since I wanted to use the white sauce, I tried like this. In case , you don't have white sauce, no problem, make a stiff dough with maida/ atta adding little butter, roll and shape as you like. In case some of you've the frier, you can do in that, or it can be baked if you brush some butter or oil on it, it can be baked in an oven at 180 deg. C for 10-12 minutes or till the top gets brown.

Tomato-coriander chutney

INGREDIENTS

tomatoes 2-3 big chopped
green chilies 3-4 as per taste
tamarind little as per taste
coriander leaves 1 bunch, chopped 1 cup approximately
urad dal 1 1/2 tbsp
mustard seeds  1 tsp
hing little
salt to taste
water little to grind
oil 2 tsp


METHOD
In a kadai/ pan heat 1 tspoil, add mustard seeds, once it crackles, add urad dal, hing, once dal is brown, remove and keep in the mixer jar, once cool grind
in the same kadai/ pan, add more oil, add the green chilies and tomatoes, cook till tomatoes are soft adding little salt, tamarind
remove once cool, grind with the ground urad dal mixture
wash the coriander leaves well, keep in a colander to drain. I do this much before starting to season, at least 45-60 minutes before, so water gets drained well
add the chopped leaves , grind adding salt and water little  as needed to a fine paste.
You can eat with rice, idli, dosa, adai, roti, sandwich.

Healthy Dates-Nuts-Fruit Roll Baked

I love to try different recipes, I see the cookery show, but then change according to what I've to make it healthier. In this recipe too, in the original, she had used all types of nuts and dates. Here, I've used only cashews and almonds, dates and papaya. I never like to waste food. When I cut the papaya, it seemed ripe from outside, but wasn't fully ripe, which I realised only after cutting. So, kept it in the fridge to change it into something else. When I saw this recipe yesterday, got the idea of using the papaya, as then hubby will not know it, as there are dates and nuts to overpower it.



I made this for dessert now. It came out tasty, but the problem is with the bread that we get here doesn't like to be rolled. Even when I made bread pudding the other day, it didn't taste like the one made with  Britannia or Modern bread. 

Ingredients
Cashews and almond chopped about 1/2 cup
Dates chopped  3/4 cup
Papaya cooked 3/4 cup approximate
Sugar  1tbsp
Water  l/2 cup
Ghee 4-5 tsp

Method

Since the papaya wasn't fully ripe,  I didn't want to waste it, so I cooked it with little water and sugar till it was soft to mash it and the water dried.
In 2 tsp ghee, I roasted the nuts, added the chopped nuts and papaya keep stirring till it dries and comes together and leaves the sides of the pan.
Let it cool, roll the bread with a rolling pin, roll the cooled stuffing in one corner, roll it tight. If need be seal the edges with slurry.
Heat oven to 180deg.  C,  grease the baking tray, place the rolls brush with  ghee bake for 10-15 minutes till brown.  OR
You may grill in microwave, that is what I did for 6-7 minutes. It depends on the power.


NOTES-
1) you can add walnut, pista also, but as due to pandemic, haven't shopped for more than a month, made do with what I had, as yesterday, while I was describing this recipe to our daughter, hubby heard and said, "Oh, you're going to make it for me tomorrow". So tried it.
2) I used papaya, it isn't compulsory. Since I had cut papaya that wasn't too ripe to eat, cooked it with just enough water and little sugar, so it will be soft to mash. Instead of papaya, you double the quantity of dates.
3) You'll need slurry, if the bread doesn't get sealed well, also I feel to bake, you don't need slurry, as the edge won't open, even it does, it isn't like deep frying, where the stuffing will come out. I didn't use it, though in the original she did use. I've taken part of the recipe, then changed adding papaya, less nuts, so surely you can make do with what you've now.

How do you choose ripe Avocado?

How do you choose ripe Avocado? If you are like most, you probably apply the squeeze test.
This is actually not the correct way to select the best fruit. If you want to find the most perfectly ripe Avocado, the secret is in the skin color.


As you can see by this helpful infographic, you should be looking for a green-brown or dark brown skin tone if you want a ready to eat Avocado.
On the other hand, a bright green Avocado is not ripe. An olive-green skin indicates it is 2-3 days away from ripening. This is handy if you don’t need to use it immediately. You can actually pop it in your fruit bowl and allow it to ripen naturally.

While we’re on the subject of ripening avocado’s, did you know that you can speed up the process? There are certain times of the year when the only avo’s on offer are rock hard. Now you can learn a clever trick that will allow you to have soft, useable avocado’s one full day later.

We found a number of ideas being shared including popping them in foil in the oven and even in the microwave. All this does is heat your avocado up and soften it. This does not actually ripen it. We have found a technique that uses flour that gets great results.

How To Ripen Avocado Overnight

Wash the avocado well, wipe it dry. It has to be absolutely dry, as it is going to be buried in your flour tin ! Yes, the regular wheat flour that you use, it has to be buried in over night. Viola ! it will be ripe in the morning !

Pineapple halwa

Sorry having problem loading photos from the card. This is completely my own idea. In case, anyone tries, please give the credit to me. I love sweets, but always prefer it to be mild. I can't digest too much fat, so, I prefer to use less fat. Those who like, can add more fat. Since hubby was asking for sweets and we can't go out of the gate, also no regular suppliers are coming, made it to satisfy his sweet tooth.

INGREDIENTS
pineapple sliced  1/2 cup ( no hard and fast rule)
maida / all purpose flour 1 cup 
sugar 1/2 cup
gur/ jaggery/ molasses  1/4 cup ( approximately OR you can only add sugar)
ghee 4 tsp
cardamom pdr. 1/2 tsp
pineapple essence   1/2 tsp
water 2-3 cups

METHOD
I cooked pineapple in a cup of water with sugar, kept the gas in sim, let it simmer for about 20 minutes 
In a non-stick pan, I added the flour, kept roasting it in low flame for about 5 minutes, stirring often.
I took the pan off the gas, then added the pineapple with the syrup little at a time stirring well, then added more water, stirring , so that there are no lumps.
I added the gur, kept stirring continuously, as it started thickening, I added 1 tsp of ghee at a time and kept stirring, once ghee was absorbed, I added more ghee, a tsp at a time and kept stirring till it left the sides, and also all the gur had melted. 
I switched off the gas, added essence, cardamom pdr., mixed well.
Hubby liked it, then gave to our niece who is staying above us, she also liked it, she said the sweet is mild. Since, I added gur, it had  a light brown colour.

NOTE- 
1) honestly, I don't measure my ingredients, but the quantity will be almost what I've mentioned. 
2) if you don't feel like adding gur, you can add sugar to taste
3) You can add nuts, as due to shortage of nuts, whatever, I've, wanted to save it, as we both eat a few nuts daily.
