Stuffed dahi-vada

Ingredients
for stuffing
boiled peas 1 tbsp
carrot finely chopped/ grated   1 1/2 tbsp
beans par-boiled  1 1/2 tbsp
chili flakes  1/2 tsp
salt to taste
boiled corn  1 1/2 tbsp
lime juice  1/2 -1 tsp
mix all lightly mash

for vada
urad dal washed, soaked and ground to a fine paste with salt and green chilies to taste
the batter should be thick
oil for frying

METHOD
wet hands, take some dal batter, flatten, put enough stuffing, cover well, flatten and deep fry in medium hot oil till brown and crisp, drain, serve hot with coconut chutney.

Corn-lentil pie

Ingredients
butter  1 tbsp
oil  1 tbsp
garlic finely chopped  1 tsp
onion 1 finely chopped
capsicum  3 tbsp
carrot   2 tbsp
boiled corn  3 tbsp
tomato 1 finely chopped
masoor dal  cooked   1 cup ( don't overcook the dal)
salt and pepper pdr. to taste
oregano 1 tsp
chili paste 1 tsp
tomato ketchup  1 tbsp
tomato puree of 2 tomatoes
sugar 1 tbsp

Top layer
potatoes 3 big boiled and mashed  2 cups
salt to taste
milk 3-4 tbsp

Method
heat butter and oil in a pan, add garlic, fry till brown
add onion, fry till light pink, add capsicum, carrot, tomato cook for 2-3 minutes
add boiled corn, dal, seasoning, ketchup, tomato puree, cook till thick covered on medium flame
spread the vege layer on a greased baking tray
top layer, add seasoning to mashed potato, add milk little by little to get the correct consistency to pipe from a piping bag with star or any nozzle that you prefer.

If you prefer, you can spread some grated cheese on top, bake in a pre-heated oven at 200 deg. C for 10-15 minutes till cheese has melted or potatoes are golden brown. Time can vary according to oven size and power.

Semolina vege toast

Ingredients
semolina/ suji  1 cup
capsicum  cut each colour 1/2 cup OR use only green capsicum if you cna't get others
cabbage finely chopped  1/2 cup
carrot finely chopped  1/2 cup
curd  1 cup
salt to taste
green chilies finely chopped to taste
coriander leaves finely chopped 2-3 tbsp
bread slices as needed
oil for shallow frying

METHOD

mix all the ingredients till bread slices well, spread on one side of bread
heat a frying pan with little oil, put the spread part of bread down to fry first, fry on medium heat
turn it once it is golden, fry till the other side is also golden
serve hot with chutney of your choice.


Note- you can use other veges of your choice too, e.g., spring onion, mushroom, or whatever you fancy.

Flax- eggs - it is a substitute for eggs - you can make it

Ingredients
  • 1 Tbsp (7 g) flax seed meal (ground raw flax seed)
  • 2 1/2 Tbsp (37 ml) water
Instructions
  1. Add flax seed meal and water to a dish and stir. Let rest for 5 minutes to thicken. Add to recipes in place of 1 egg.
  2. It's not an exact 1:1 substitution in every recipe because it doesn't bind and stiffen during baking quite like an egg does. But I've found it to work incredibly well in pancakes, quick breads, brownies, muffins, cookies, and many other recipes.
ps- this is not my recipe, searched how to make flax-egg, saw this. I wanted to know how to make for a recipe that I saw now.

Spinach Lentil Waffles

Ingredients
moong dal  3/4 cup
besan / gram flour  1 cup
spinach finely chopped  1 1/2 cups
onion 1  finely chopped
tomato 1 skinned and finely chopped
sugar 1 tsp
salt to taste
green chilies finely chopped to taste
oil  2 tbsp
baking pdr. 1/2 tsp

Method
wash and soak dal for 2 hours. grind to a fine paste
rub salt and sugar with spinach
mix spinach with ground dal, flour, chilies, onion, tomatoes, baking pdr. and oil together.add water to make pouring batter. rest the batter for an hour.
make waffles, serve hot with green chutney/ ketchup.

Methi waffles

Ingredients
flour  1 cup
besan/ gram flour  1 cup
methi leaves finely chopped  1 1/2 cups
green chilies finely chopped 4-5
hing a pinch
sugar 1 tbsp
salt to taste
oil  2 tbsp
baking soda  1/2 tsp
green chutney to serve

Method

mix salt and sugar to methi leaves, rub well and crush leave. add this to flour and besan, along with hing, chilies, oil and baking soda. add more water to make thin batter. rest the batter for an hour.
make waffles with oil / butter. serve hot with green chutney.

Crisp raised waffles

Ingredients
flour 2 cups
water  1/4 cup
warm milk  1 1/2 cups
fresh yeast  1 tsp
sugar 2 tsp
salt 1 tsp4melted butter 4 tbsp
green chilies finely chopped 4 or to taste
coriander leaves finely chopped  1/4 cup

 Method
sieve flour, melt sugar and slat in luke warm water, add yeast, melted butter ad milk. make a smooth batter . cover and set the batter aside for 1 1/2 hours to rise.
mix green chilies, coriander leaves once the natter has risen, mix well, make crisp waffles with melted butter.

Sweet Walnut Waffles

Ingredients
 flour  2 cups
baking pdr. 2 1/2 tsp
salt a pinch
powdered sugar  4 tbsp
melted butter   4 tbsp
milk  11/2 cups
walnuts chopped  1/4 cup

Method
sift flour  with salt and baking pdr. and transfer to a bowl.
add powdered sugar, melted butter, walnut and milk , mix adding water is need be to a smooth batter, with pouring consistency.
rest the batter for an hour before making waffles.

Coconut Waffles

Ingredients
flour  2 cups
baking pdr.  2 1/2 tsp
salt  1/2 tsp
sugar   2 tsp
melted butter   4 tbsp
milk    1 1/2 cups
grated coconut  1 cup4butter and honey for serving

METHOD
Sieve flour with baking pdr. and salt in a bowl.
add melted butter, sugar, coconut and milk to make a smooth batter, with a pouring consistency.rest the batter for 60 minutes.
Spread melted butter on the waffle iron, and heat to required temperature.
Pour just enough batter to cover the waffle iron, close it, cook till it turns light pink.
serve at once with little melted butter and honey.

Cheese dip

Ingredients
butter 3 tsp / 15 gm
spring onion  finely chopped  1 cup
cheese spread 1 carton / 200 ml
milk  1/4 cup

Method
heat butter in a saucepan, add spring onion and stir in medium heat for a minute.
add the milk and cheese spread, continue cooking in low heat till all are combined well.
serve hot with crackers/ veges cut /  bread sticks.

Tomato Mayonnaisse Dip

Ingredients
tomatoes 3 skinned, seeded and finely chopped
garlic 1 clove crushed
castor sugar 1 tsp
tomato puree or paste 1 tbsp
mayonnaise 1 1/4 cups

Method
put tomatoes, garlic, sugar, tomato puree in a blender and blend to a puree.
remove in a bowl, slowly stir in mayonnaise, mix well, refrigerate till needed

Ingredients
yoghurt  1 cup
vinegar 2 tbsp
lime juice  1 tbsp
coriander leaves finely chopped  2 tbsp

combine all the ingredients , blend well till well mixed, refrigerate till needed.

Bootle gourd/ doodhi ( ghia) halwa

INGREDIENTS
doodhi 1 kg
sugar 1/4 kg
milk 1 litre
ghee 3-4 tbsp
cardamom pdr. 1/2 tsp
nuts 1 tbsp

METHOD
grate doodhi, squeeze out excess juice
heat 2 tbsp ghee in a heavy kadai or non-stick pan, add the grated doodhi, fry till soft
add milk, keep stirring from time to time on low flame till the mixture becomes thick
add sugar, mix well, keep stirring till it leaves the sides of the pan, add 2 tbsp ghee, mix along with cardamom pdr. and nuts well for another 2 minutes
garnish with some nuts and raisins, serve hot / cold

GATTE KE SAAG

INGREDIENTS
besan  2 cups
curry leaves 10
curd   1/2 cup
garam masala  1 tsp
ghee 4-5 tbsp
salt to taste
chili pdr. to taste
coriander pdr. 2 tsp
turmeric pdr.  1/2 tsp
mustard seeds  1/2 tsp
coriander seeds  1/2 tsp
hing 1/8 tsp
jeera 1/4 tsp

To prepare gatte
mix 3 tbsp of ghee to besan, along with 1/4 tsp of haldi, 1/2 tsp of chili pdr., 1/2 tsp garam masala, jeera, 1/4 tsp coriander seeds, salt and a big pinch of hing, mix well.
add enough water to make a hard dough, roll into 1/2" thick logs
boil the logs in hot water, till they float on top, strain, cool and cut into 1" pieces.
heat 2 tbsp ghee, add mustard seeds, once it crackles, add jeera, hing,curry leaves, rest of the masala powders, salt, mix well, add the beaten curd, keep stirring till it begins to boil, add the gatte, let it simmer for 2 minutes, if need be add wee bit of water, remove, garnish with coriander leaves, serve hot with roti/ rice.

Dal kachori

INGREDIENTS
all purpose flour/ atta  1/2 kg ( or you can mix both flours)
ghee 6 + 2 tbsp
moong dal  1 cups
hing 1/8 tsp
garam masala  1 tsp
jeera  1 tsp
turmeric pdr  1/2 tsp
salt to  taste
mustard seeds  1/2 tsp
coriander leaves finely chopped 2-3 tbsp
curry leaves 1 sprig finely chopped
ginger 1 "
green chilies to taste
oil for frying

METHOD
soak dal for about 3 hours, grind it along with ginger and green chilies to a thick paste
heat 2 tbsp ghee in a kadai, add mustard seeds, once it crackles, add jeera, hing, curry leaves , add the ground dal, turmeric, garam masala, coriander leaves, salt and fry till the mixture is dry on a low flame stirring continuously. remove, cool
For the dough
add 6 tbsp hot ghee to the flour, along with salt, mix well, add enough water to make a soft dough. rest the dough for 30 minutes, knead well again, dust flour, take small lemon size balls of the dough, roll like small puris, put enough stuffing, cover carefully from all sides, fry in hot oil, till crisp, drain well, serve with hot and sweet chutney.

Panchamel dal

INGREDIENTS
tuvar/ arhar dal  1/2 cup
chana dal  1/2 cup
black gram dal( whole black urad dal)  1/4 cup
green gram dal ( whole green moong dal)  1/4 cup
masoor dal   1/4 cup
ghee  2 tbsp
cumin seeds/ jeera 1 tsp
mustard seeds  1/2 tsp
hing  1/8 tsp
curry leaves 1 sprig
coriander leaves chopped 3 tbsp
chili pdr. to taste
turmeric pdr.  1/2 tsp
garam masala  1 tsp
salt to taste
cloves  2-3
black peppercorns 4-5 coarsely crushed
cinnamon 1 " 
bay leaves  2

METHOD
wash well all the dals together. Add enough water and cook in a pressure cooker till done.
Once you can open the cooker, blend the dal with a hand blender, add enough hot water to get the consistency you want, bring it to a boil, simmer
in the mean time, heat a small pan/ kadai, add ghee, once ghee melts, add mustard seeds, as it crackles, add jeera, hing, curry leaves, peppercorns, cloves, cinnamon and bay leaf, fry for a minute..
add turmeric and chili powders, pour it over the boiling dal, add half of the coriander leaves, salt and garam masala, mix well,  let it simmer for 3 minutes, remove from heat, add lime juice to taste, garnish with remaining coriander leaves, serve hot with roti/ rice.

Peas parantha

Ingredients

dough as needed like for any parantha

for stuffing
oil 2 tsp
jeera 1 tsp
spring onion finely chopped       1 cup
peas boiled and crushed         200gm
coriander leaves finely chopped    3 tbsp
paneer crumbled    50 gm
pudina chopped  2 tbsp
green chili-ginger-garlic paste   2 tsp( garlic optional)
turmeric pdr.  1/2 tsp
salt to taste

METHOD
Heat oil, add jeera, once it crackles, add spring onion, fry for 2-3 minutes, add peas and rest of the ingredients, mix well on low flame for 4-5 minutes, remove, cool and stuff paranthas as usual, cook with ghee, serve hot with cucumber and tomato raita and mango pickle.

Home-made condensed milk

Ingredients -
•Full Cream Milk - 500 ml
•Sugar - 100 gm
•Baking Soda - 1 pinch only. 

Method -
• Take milk in a thick bottom non stick pan , bring it to boil. 
• Add sugar to it and keep stirring. 
• When sugar is dissolved add a pinch of baking soda to it and cook this mixture on low flame with continuous stirring. 
• After some time your milk will start thickening .
• Take a drop of this milk in between your finger tips and check if it forms like one thread syrup          ( ek taar)  chaasni ( sugar syrup) .
• When it thickens and start forming one thread, remove it from the gas and cool it. 
• Its ready to use for baking and making sweets or eat it just like that
• Store in glass jar and refrigerate. Consume within 10 -15 days. 

This recipe yields around - 200ml condensed milk .

Foods that you must not store in the freezer

You can freeze just about anything (and we could all probably cut down on food waste by freezing more). Some things, however, are virtually unrecognizable once they've been frozen and thawed. In other words, you can freeze whatever you want, and use these foods frozen, but some foods don't hold up after being defrosted. Freezing food is a delicate matter. No matter what you're freezing, make sure to use it within nine months or so (yes, that means cleaning out your freezer), and also make sure to defrost it correctly. Most food requires adequate time for defrosting; a slow thaw typically yields the best results. You should also be mindful of cooling dishes completely before freezing them, and storing them in freezer-safe containers.

Foods that should not be kept in the freezer-
1) Salad Greens
If you want crisp, flavorful salad greens, don't put them in the freezer. Greens will wilt and become soft and limp after they're frozen, and they'll also lose their flavor. Instead, store your washed and dried greens in the refrigerator, ideally wrapped in a paper towel in a plastic bag.
 
2)Milk -  Frozen milk will be lumpy when you thaw it, so freezing it is not the best idea if you want to drink it straight. If you're planning to use the milk in cooking, however, thawed milk can work. Just make sure that when you defrost it, you let it sit in the refrigerator for many hours -- up to a day.
 
3)Fried Food The best part about fried food -- the crispy, crunchy, greasy goodness -- will all but disappear if you put it in the freezer. Delicious, fried batter will turn soft, moist and mushy. What's the point of eating fried chicken if the coating doesn't crunch when you sink your teeth into it? What's worse  

4)Eggs In Their Shell
You know how liquid expands when it turns solid (which is why you should choose appropriate containers and leave a little extra room when storing liquids in the freezer)? Eggs are no exception. The liquid inside will harden, expand and crack the shell. Worst case scenario: You'll be left with an eggy mess that will leave your freezer smelling rotten. Best case: You'll have unusable eggs.
 
5) Raw Fruits And Vegetables
Fruit and vegetables with a high water content will turn icy in the freezer, and they won't thaw well. Instead of returning to their crispy, crunchy state, they'll turn limp and soggy. No one wants to eat a limp piece of celery or a soggy cucumber. 
 
6) Sour Cream
Freezing sour cream will cause it to separate, and that's just gross. You can stir it back together and use it in cooking, but you definitely don't want to eat it alone after it's been frozen and thawed. 
 
7)Crumb Toppings
Crumb toppings on things like casseroles, mac and cheese or pies will suffer the same fate as the exterior of fried food -- they'll become soft and soggy. When the whole point of a crumb topping is to bring crunch and new textures to a dish, you'd better not risk putting it in the freezer. You can defrost the casserole and add the crumb topping later
 
8)Yogurt
We're not talking frozen yogurt here. We're talking yogurt that is frozen. Okay, that's confusing, but you get the point. Putting yogurt, Greek or otherwise, in the freezer will change the texture. You won't end up with something like the frozen yogurt that has taken over America in the last few decades. You'll end up with something you don't want to eat. Like sour cream, the yogurt will separate. It'll be acceptable for cooking if you really want to use it, but otherwise not great to eat on its own.
9)Potatoes
Because potatoes have a high water content, ice crystals will form when you put whole, raw ones in the freezer. You'll be left with a mushy potato when you go to thaw it. Potatoes are best kept in a cool, dry place. If you absolutely want to freeze potatoes, you could try cooking them first -- they may still thaw out a little watery, but depending on how you cooked them, you have a better shot at turning out with something edible.
11)Egg White Based Frosting
Frosting made from egg whites will lose its fluffiness and emit liquid if put in the freezer. This could completely ruin your cake -- and that's just a crime.

Jackfruit seeds-moongdal halwa

INGREDIENTS
jack-fruit seeds 1 cup finely chopped after removing the thick outer-skin

moong dal 1/2 cup
gur  1- 1 1/2 cups as per taste
ghee 2 tbsp
nuts finely chopped 1 tbsp

METHOD
after cutting the seeds, wash it along with moong dal well
I added both of it in a pressure pan with enough water to cook
once the steam came from the pressure pan, I put the whistle, then made the gas very small, for it to get cooked for about 20 minutes
once the pressure was released, I opened the pan, mash the dal and the seed well with a vegetable masher, or you can put it in the mixer to mash it well
In the pressure pan itself, I added the gur, added 2-3 tablespoons of water, kept stirring for the gur to melt and mixing it all well.
As it got thick, added ghee and nuts, reserving few for decorations, kept cooking till thick
Removed, garnished with remaining nuts and serve hot / cold.

Sorry, once it was done, gave to hubby to taste, then gave it to others to taste and forgot to take the photo. It is full of protein, iron, hence healthy, as ghee is also needed by the body to absorb fat-soluble vitamins.
