Cheesy Corn & Jalapeno Dip (Serves 6)


Ingredients  
• ½ pound bacon, diced (reserve some for garnish) 
• 8 oz. cream cheese softened 
• 1 cup shredded mozzarella cheese 
• ½ teaspoon garlic powder 
• ¼ teaspoon cayenne powder 
• 1 jalapeno, minced 
• ¼ red onion, cut into small pieces 
• 20 oz. frozen corn, thawed and divided 
• ¼ cup fresh chopped basil (reserve some for garnish) 
 
Directions 
1. Preheat the oven to 400F. 
2. In an 8-inch oven-safe skillet, cook the diced bacon over a medium heat until brown and crispy. Remove the bacon from the grease and drain on a paper towel. Keep the skillet for later use. 
3. In a medium bowl, mix the cream cheese, mozzarella, garlic powder, and cayenne powder. Add the jalapeno and red onion. Add roughly ¾ of the corn, cooked bacon, and chopped basil, reserving the rest of each for the garnish. Stir until fully mixed, then spread into the skillet. 
4. Bake for about 30 minutes, or until the cheese is melted and the dip is bubbling. 5. Garnish the dip with the reserved corn, basil, and bacon.

ps- those who are vegetarians can add potato or cauliflower instead of bacon

Pizza Dip Supreme (Serves 4-6)

Ingredients 
• 8 oz. cream cheese, softened 
• 2 ½ cups Italian cheese blend, divided 
• 1 teaspoon Italian seasoning 
• 1 teaspoon garlic powder 
• ½ cup pizza sauce 
• ¼ cup mini pepperoni slices 
• ½ cup Italian sausage, cooked and crumbled 
• 2 tablespoons black olives, sliced 
• 2 tablespoons red onion, diced 
 
Directions 
1. Preheat the oven to 400F. 
2. In a small bowl, blend together the softened cream cheese, 1 ½ cups of Italian cheese blend, the Italian seasoning, and the garlic powder, until fully combined. 
3. Spread the cream cheese mixture evenly into the bottom of an 8-inch cast iron skillet. 
4. Pour the pizza sauce over the cheese layer and spread evenly. Top with the remaining 1 cup of Italian cheese, the pepperoni slices, sausage, olives, green pepper, and red onion. 
5. Bake for 20 minutes, or until the cheese has melted and is bubbling. 
6. Allow to cool slightly, then serve and enjoy.

Queso Blanco Dip

 
Ingredients 
 • 8 oz. cream cheese 
• 1-pound pepper jack cheese 
• ½ pound white American cheese 
• 2-4 oz. can diced green chilies 
• 2 medium jalapenos, minced
• ¼ cup milk, as needed 
• 1 green onion, sliced (garnish) 
• 2 tablespoons chopped fresh cilantro (garnish) 
 
Directions  
1. Into the bowl of a 3-quart slow cooker, add the cream cheese, pepper jack cheese, white American cheese, green chilies, and jalapenos. 
2. Heat on high for 1 ½ to 2 hours, or until melted and smooth, stirring occasionally. 
3. Add the milk, until you have reached your desired consistency. 
4. When the dip has finished cooking, turn the slow cooker heat to warm, and garnish with green onion and cilantro.

This serves 15

Egg-less Orange flavoured Banana bread

 What will you do if your kid buys a bottle of orange squash, but didn't use it? Either you keep drinking orange squash or like me add to your banana bread batter ! You've a new taste banana bread.

My dear hubby loves sweet bun, or cakes  with lots of tutti-frutti and nuts, sadly, now-a-days sweet buns we don't get in this city with tutti-frutti. When banana is over-ripe, I mash add sugar and keep in the fridge. When in a mood to bake, I bake either plain banana bread, or like yesterday adding orange squash !

INGREDIENTS

banana 2 medium size well mashed

sugar to taste

curd 2 tbsp

milk 2-3 tbsp

orange squash 3-4 tbsp

tutti-frutti  and nuts as desired

ghee 1 tbsp +grease

baking pdr 1 level tsp

baking soda 1/2 tsp

salt 1/4 tsp

maida / all purpose flr 1 cup approximately

honestly I don't measure, add ingredients as I wish

METHOD

beat well either with a whisk or spoon, banana, sugar, salt baking pdr, baking soda well

add curd, beat well, add little flour, beat well again

add milk, add some more flour beat well

then I added squash, beat well, then add flour little at a time till your batter is thick like your normal cake batter

then add nuts and tutti-frutti, mix well

grease a microwave safe-dish, pour the batter, I baked in normal micro mode only for 7 minute or bake in normal oven till done.

I'm sorry forgot to take photo, as only few pieces were left, as I was eager to cut and take for my friends. All loved it for its unique flavour.

When you come across a recipe that calls for red or yellow onions, you probably think that you can use whatever onions you have handy, but this is actually not the case. When a recipe calls for a particular kind of onion to be used, they actually mean that kind of onion!

Red, yellow, and white onions are all slightly different when it comes to their flavor and texture. Before delving into these differences, how do you know which onions to buy at the store? 
 
Well, when purchasing onions, go for those that feel heavy and firm in your hand. Avoid soft onions or ones that have a sharp odor before peeling; these are clear signs that the onion is old. Except for sweet onions, since these onions can be stored for a number of weeks in a cool, dark pantry or cupboard. 
 
Why are sweet onions stored differently? Well, read on to find out why, and what the crucial differences are between common onion varieties. 
 
Yellow Onions

More often than not, yellow onions are our go-to onions - kind of like an all-purpose onion. They tend to have a nice balance of astringency and sweetness, becoming sweeter the longer that they are cooked. 
 
They are usually fist-sized and have a fairly tough outer skin and meaty layers that can be tricky to cut. The only variety of yellow onion that we are most likely to find in the store are Spanish ones. This type is slightly sweeter and more delicate in flavor.

White Onions
These onions have a sharper and more pungent flavor than yellow ones, and they also have a thinner and more paper-like skin. They can be cooked exactly like yellow onions, but they're best minced and added to chutneys and raw slaws.  
 
Red Onions
With their deep purple outer skin and reddish flesh, these are the black sheep of the onion family. Despite the fact that they look so different, red onions are similar to yellow ones in flavor, though their layers are less tender and meatier. They tend to lean more towards the sour end of the flavor spectrum. Red onions are great for salsas, salads, and other raw preparations for their lovely color and mild flavor.

Sweet Onions
These onions are trickier because they look very similar to your average yellow onion. However, while they might look similar, they taste very different. They lack the sharp astringent taste of other onions, and taste really sweet. 
 
These are usually what you'll find on top of sandwiches. They can range in color from white to yellow and often have a flattened or squashed appearance. These tend to be more perishable than other varieties, and so should be stored in the fridge.
