How To Make Your Skillet New Again

Seasoning and Cleaning Cast Iron Skillet is a highly searched term. Many of us love to cook with cast iron. It is tough, it stays nice and hot, and will also keep your food warmer for longer.

Your pan gets better every time you use it, especially if you keep it seasoned. A small amount of iron is also absorbed into the foods during the cooking process making it a healthier and safer option.

Washing Cast Iron Skillet

When you know how to care for your Cast Iron correctly, it will last you a lifetime. Youtube Star Joshua Weissman left his cast-iron skillet outside, and in the rain for a whole week.

Rather than throw it out, he set about learning how to restore his skillet to its former glory.

He has done lots of research and conducted many experiments. As a result, he shares noteworthy information on what works.

One of his first recommendations is to soak your cast iron skillet in 50% water and 50% distilled vinegar for an hour. You can soak your skillet for anywhere up to 5 hours if required.

This is like an acid bath for your skillet. He then sprinkles his skillet generously with baking soda and begins the scrubbing process. He recommends using a metal scouring pad for this step and then finishes off with a steel wool pad, all the while rinsing with water.

Mango halwa

Summer is the time for the king of fruits to come to the market. But due to global warming or effect of pandemic, GOK, mango, the king of fruits was available in the month of December. As our son's family had come from UK, thought that I'ld buy some for them to enjoy the juicy fruits. Luckily, I had bought 2 varieties. The bigger one thinking that it will ripen when they arrive and a smaller variety. Sadly, the bigger one didn't ripe full, but started to get slightly black on the top, I had to cut them and store. They enjoyed eating the smaller variety, which was sweet they said.

As I had made fried modaks, and apple cobbler, I didn't have the strength to make mango halwa, as I also made carrot halwa, which is also my son's favourite. 2 days after they left back to UK, I pureed the mango along with sugar in the mixer jar, about 1 big cup of puree, I put in the heavy pan along with roughly with flour. Shall give the ingredients below-

INGREDIENTS

mango puree 1 big cup

sugar 1/2- 3/4 cup depending on the sweetness of the mango and as per your taste

milk 300 ml

all purpose flour/ maida 1 heaped tbsp

jack-fruit flour 1 tbsp ( optional, I added as it is supposed to reduce the GI for diabetics)

ghee ( clarified butter) 11/2 tbsp

nuts 1 tbsp chopped

METHOD

in a heavy pan, I added the mango puree, maida, jack fruit flour, milk and about 1 tbsp of sugar, mixed well.

I kept it in very low flame after mixing it all well. Kept stirring in the beginning every 5 minutes, once it started to thicken, every 2-3 minutes, added the chopped nuts at the stage.

Once it was almost thick, added 1/2 the amount of ghee, mixed well, continue cooking, stirring well from the sides, or else the sides will get dry soon and then you'll get less halwa.

Spread it on the greased plate and went for lunch. Before I'ld return after playing games with my friends, hubby managed to finish one corner full, said it was very tasty !

So, it is for the 2022, with hope and prayers that the pandemic should leave this planet soon and everyone survives with good health, happiness and above all, we need peace on this planet now.

I added little ghee on the plate to grease it well, and the rest of the ghee I added and kept stirring till it was quite thick, spread on the plate, sorry couldn't spread properly, as I was called for some work.

Wishing All A Very, Very Happy, Healthy, Prosperous And Peaceful year ahead. May All Your Dreams come True.🙏😷😀

Real or Fake Olive Oil?

Choosing your olive oil is a bit like choosing the right wine. When it comes to wines, you might look at the grape type, where it came from, or the color. When it comes to olive oil, people usually look at the bottle type, the color, smell, or extra virgin versus light.
Olive Oil Taste Test
Studies have been conducted on the purity of olive oil to the point that consumers don’t always know if they’re purchasing a legit product. We know it’s good for us, but things can start to get confusing when it’s time to buy some. For example, some extra virgin olive oils are cut with other oils such as soy or sunflower.

You don’t always know what you’re getting, but there is a way to separate the reals from the frauds – your senses!

According to olive oil expert Katerina Mountanos, you should start with the smell and then move onto the taste. A quality olive oil should have a scent like fruits, grass, herbs, or plants.

Here’s what she suggests you should do:
- Pour a bit of the oil into a small glass and cover the top with your hand.
- Swirl the oil around in the glass, making sure that your hand is warming it gently.
- Remove your hand and have a quick sniff.

You’ll want to look for notes of tomato, almonds, fruits, or something peppery such as arugula. No smell, a waxy scent, and a vinegary scent are bad signs. However, the ultimate test lies in tasting it.
Mountanos has developed a science to tasting olive oil that involves a bit of swirling, inhaling, and coughing. If you’re down, here’s what to do:
- Swirl it around in the glass and then take a tiny sip.
- Inhale a little bit of air through your lips.
- Swish the oil around, and then swallow it.

It should taste like plants, but according to Mountanos, the kicker is that you will cough after experiencing a bitter aftertaste in the back of your throat. If you do, this is the sign of a great-quality, real-deal, extra virgin olive oil. She says that if the cough or other weird feeling in your throat doesn’t appear, you either have an oil that’s rancid or a low-quality imposter. There’s even a chance that it’s not even olive oil, let alone extra virgin.

Once you have found the perfect olive oil, you want to make sure that you store it in a cool, dark area where heat and light cannot destroy it. If you notice an off-putting odor, get rid of it.

A study from 2011 by the University of California-Davis concluded that 70% of olive oils sold in the U.S. did not meet the standards for being classified as extra virgin. Now you have your own way to test!
