CARROT-DATES-PANEER BARFI ( very healthy)

 Oats pdr. 1 cup
 carrot finely grate or mince in mixie 1 cup, cooked with 1/2 tsp ghee to remove the moisture
 cooked and spread on a greased plate
ready to eat after cutting into pieces

INGREDIENTS
oats powdered 1 cup
carrot minced in mixie fine or finely grate 1 cup
cocoa pdr. 1 1/2 tbsp
brown sugar 5 tbsp, more if you want it sweeter, as mine is mildly sweet only
paneer / cottage cheese  150 gm
dates 12 de-seeded and soaked in warm water
ghee  3 tsp  +to grease plate
vanilla essence 1 tsp
 milk 2 tbsp 

METHOD
in a heavy pan add 1/2 tsp ghee, once it melts, add the grated carrot, keep frying till the moisture goes, I kept the gas on sim, kept stirring in between, while I powdered oats, and ground dates and paneer
remove the carrot once it is dry
in the same pan, add the ground paste, 1 tsp ghee and I added milk to the mixer to remove all the date and paneer mixture that was sticking all around it
kept cooking it on low flame, stirring often, once it got thick, I added cocoa pdr. and brown sugar, stir well, let the sugar gets observed well, then add carrot and oats mix well, adding the remaining ghee, keep cooking till it forms a mass
quickly spread on a greased plate, spread well, if you desire, you may add some chopped nuts on top and press it down before the barfi sets
 keep it to set for about an hour, then cut into desired shapes and serve.
I made it this morning to give to our friends here, especially men, as women are called to various homes and given some gifts and sweets, while men feel left out. This was made specially for those men, who are staying alone, as I call them my brothers.

NOTES-This is a very healthy recipe, not too sweet, full of fibre from oats, dates and carrot, protein from paneer, healthy sugar, as I've used brown sugar, if you don't have, you may use normal white sugar. Unlike other barfis, ghee used here is very minimum, so the over-all calories will be less, even if you eat 2-3 pieces !

BOTTLEGOURD(LAUKI) KHEER WITH CHOCOLATE BALLS

INGREDIENTS
FOR KHEER
bottle-gourd grated 1 cup
milk 500 ml/ 1/2 litre
condensed milk 3 tbsp
sugar 3-4 tsp as per taste
oats pdr. 2 tsp
ghee 1 tsp

for chocolate balls
carrot grated  1/2 cup
ghee 1 tsp
beetroot grated  1/4 cup
sugar  3 tbsp
cocoa pdr. 1 tsp
almond-kaju pdr. or any nuts pdr. 2 -3 tsp
milk pdr. 2 tsp

MEHOD
for kheer
in a pan, heat ghee, fry bottle-gourd till dry on low flame stirring all the time
once dry, add milk, reserving little to mix oats pdr. and add to the milk, keep stirring till it boils on medium flame, once it boils well for a minute, add condensed milk and sugar, mix well, let it boil for another 2 minutes on low flame, remove, once it comes to room temperature, chill for at least an hour

for chocolate balls
in a pan, heat ghee, add carrot and beetroot, keep frying till dry, add sugar, cook till sugar dissolves and it starts to thick, add milk pdr and cocoa pdr., mix well, then add pdr. nuts, mix well, remove, cool, roll into small balls, chill for at least an hour
to serve, place some chocolate balls in a bowl, pour the kheer, place some balls on top and serve or serve in individual small bowls with a chocolate balls in each.

APPLE CUSTARD WITH CHOCOLATE

INGREDIENTS
milk   500 ml / 1/2 litre
custard powder  2-3 tbsp mixed with little milk
sugar  6-7 tbsp as per taste
apple one grated
lime juice little to prevent apple getting brown
dark chocolate chips 2-3 tbsp

METHOD
boil milk, add sugar, stir well, add custard pdr mixture, stirring continuously till thick, remove
in another pan, saute apple till moisture evaporates, keep in a bowl
once both are cool, mix well and refrigerate till chill
serve decorated with chocolate chips

KABULI CHANA IN AN AROMATIC GRAVY

INGREDIENTS
for masala- dry roast
coriander seeds  1 tbsp
peppercorns  1/4 tsp
cloves 2
powder these coarsely

For gravy
ghee 1 tsp
oil  1 tsp
jeera  1/2 tsp
ajwain  1/2 tsp
dry red chilies 2-3
hing little
cinnamon 1"
boiled chana  1 cup
coconut milk  1 cup
turmeric pdr.  1/2 tsp
water  1/2- 3/4 cup- depending on how thick you like your gravy
soaked and peeled almonds  10-12
salt to taste
coriander leaves finely chopped 1-2 tbsp
lime juice 1-2 tsp

METHOD
heat oil and ghee in a heavy pan, add jeera, once it crackles, add ajwain, followed by hing and cinnamon
saute for few seconds, add the powdered masala, fry a minute
add the boiled chana, turmeric pdr, water 1/2 cup, soaked almonds 8, coconut milk, some coriander leaves
simmer, cook covered for 5-6 minutes, in between stir and if desired may add more water
remove from gas, add remaining coriander leaves, lime juice, mix well
serve garnish with remaining almonds and some coriander leaves
serve hot with roti, rice, dosa, bread toast or tikki !

QUICK BESAN HALWA / PUDDING IN MICRWAVE

INGREDIENTS

besan  5 tbsp
suji/ semolina 1 tbsp
ghee  1 + tbsp
sugar 6-7 tbsp ( I added brown sugar, you may add sugar substitute or even normal sugar)
milk  180 ml approximately
cardamom pdr. 1/2 tsp
nuts and raisins as desired.

METHOD
in a big micro-safe dish, add besan, suji and ghee, mix well

keep micro high for a minute, remove and stir
keep for another 1 minute, remove and stir
then again keep for another minute, by now I'ld see the besan mixture rising well each time and after the last 1 minute, got the nutty aroma
So, I kept in high power for another 30 seconds.
stirred well, adding about 90 ml of milk slowly, mixing well
kept micro high for a minute, found that all the milk was absorbed and it was thick
so slowly added rest of the milk, mixed well, kept in high power for a minute
I added sugar, mixed well, kept in high power for 3 minutes, but after every first 2 minutes, removed and stirred well, then after every 30 seconds, as I was worried if it will boil over
once you're happy with the thickness of the halwa, remove, add nuts and cardamom pdr. mix well, serve hot or cold.

NOTES-
as I'm lazy to do the cooking over the gas, I prefer to do in microwave, for one, it gets done fast and for 2, it saves me the trouble of stirring over gas, as my torn shoulder ligament hurts, if I've to stretch myself. Also the continuous stirring over gas, would have hurt my shoulder more.
This halwa can be cooked over gas, but make sure that you fry the besan well till a nice aroma comes and it changes colour. Rest of the procedure will be the same.
As for milk, it can be omitted, OR, you may add less milk also.
As for sugar, I preferred to use brown sugar, you may use normal white sugar or sugar substitute too.
Remember to use a big micro-safe dish, OR, you've to watch as it can overflow too ! so, be very careful, when you do this.

COCONUT-GARBANZO BEANS SPICY PARANTHA

INGREDIENTS
for stuffing
coconut 1 cup grated
garbanzo beans ( kabuli chana) cooked, drained and crushed 1 cup
coriander powder 1 tsp
jeera pdr. 1/2 tsp
green chili-ginger paste 1 tbsp
hing little
ajwain 1/4 tsp
coriander leaves finely chopped 1 tbsp
salt to taste
garam masala 1 tsp
for dough
whole wheat flour 2 cups
salt little
oil 2 tsp
water to knead
oil/ ghee to cook

METHOD
heat a pan, add coconut, roast it over low flame stirring continuously
add the crushed Kabuli chana and rest of the ingredients, mix well, remove
knead the dough like normal roti dough.
roll out some dough, put enough stuffing, cover and roll out over dusted board, taking care that stuffing doesn't come out
heat a tawa, cook the rolled out parantha, till brown spots come on both sides adding oil / ghee.
serve hot with cucumber raita.

NOTES- this is a very healthy and filling parantha, full of proteins, fibre, Vitamins, eating with cucumber raita will make it a complete meal by itself.

KIWI SHRIKHAND

INGREDIENTS
kiwi green remove skin and chop
sugar 2-3 tbsp
hung curd  1 cup
powdered sugar 4 tbsp
cardamom pdr. 1 tsp
pistachios chopped 1 tbsp

METHOD
grind chopped kiwi to fine pulp
heat the pulp with sugar and keep stirring till thick
remove , cool and refrigerate
beat well hung curd with powdered sugar, adding little at a time, add cardamom pdr. mix well
add the cooled kiwi pulp, mix well, adding half of the chopped pista, refrigerate for at least 2 hours
serve garnish with remaining pistachios.

CAULIFLOWER MANCHURIAN IN MICROWAVE

INGREDIENTS
cauliflower florets   250 gm
onion 1 small chopped
ginger-green chili-garlic paste  1 tsp
soya sauce 2 tsp
sugar 1 tsp
salt to taste
oil 1 tsp
onion 1 small diced
capsicum diced 2 tbsp
cabbage cut big 3 tbsp
coriander leaves  1 tbsp
spring onion green 1 tbsp\spring onion white 1 tbsp
ketchup  2 tbsp
water  2 tbsp
corn flour 2 tsp
pepper pdr.  1/2 tsp
chili pdr.  1/2 tsp
spring onion green to garnish little

METHOD
cover cauliflower florets with hot water and little salt for  5 minutes
drain the florets, put in a microwave safe dish, add onion chopped, ginger-chili-garlic paste, soya sauce, salt  and oil, mix well, cover and microwave for 3 minutes in high power
remove, add diced onion, capsicum, cabbage, coriander leaves, spring onion green and white, ketchup , sugar and water mix well. micro for 2 minutes covered
remove add corn flour, pepper pdr., chili pdr., mix well, cook uncovered for 1 minute.
serve garnish with spring onion green.

HOW TO COOK CAULIFLOWER QUICKLY IN MICROWAVE

Cauliflower grows close to ground, so some small insects are found in it. At times, even after careful checking, we may miss some of those tiny crawly things. So, one way to get rid of those insects and to cook them fast, soak the florets in hot water with salt and turmeric, cover the pot for 5 minutes, then drain and wash well. Then when you cook those florets in microwave, it will get cooked in 2-3 minutes. For easy healthy Manchurian, see my next recipe.

Easy Tharatipal In Microwave

INGREDIENTS

sweet condensed milk 1 can
curd 2 tsp
ghee 1 tsp

METHOD

mix the ingredients well in a micro-safe dish, micro high for 3 minutes, remove stir, keep for another 3 minutes, stir if need be keep for another minute. It depends on the power and voltage of your microwave. It should get done in 7 minutes at the most.

SPICY POTATO PURIS

INGREDIENTS

whole wheat flour 1 1/2 cups
besan 1 tsp
rava 1 tsp
salt to taste
potatoes boiled 2 big
fresh coriander  leaves finely chopped 1 tbsp
spices
dry ginger powder 1/2 tsp
hing 1/4 tsp
saunf pdr. 1/2 tsp
chili pdr. to taste
coriander pdr. 1 tbsp
pepper pdr. 1/4 tsp 
jeera pdr. 1 tsp

water little to knead
oil for frying

METHOD
mix the flours well in a bowl
boil the potatoes, peel and grate it, or while hot mash well so that there are no lumps
mix all the spices well in a small bowl, add to the flour mixture, mix well adding chopped coriander leaves.
add salt to taste, add potatoes little at a time, mix well, keep repeating till all the potatoes are well mixed with the flours, let it rest for 5 minutes
knead the mixture well again, add little water to make a stiff dough.
cover and let the dough rest in the fridge for 30 minutes
knead the dough well, grease your palms, roll the dough well into small lemon-sized balls
grease the rolling pin and the rolling board well, roll into slightly thick puris, roll evenly and don't turn the puri while rolling
heat oil, fry in medium flame by pressing lightly for the puris to puff up, fry till light brown on both sides, drain well on kitchen towel, serve hot with pickle and curd.

ROSE-TUTTI-FRUTTI EGG-LESS CAKE

INGREDIENTS
all purpose flour 1 cup
sugar 1/4 -1/2 cup as per taste
rose syrup 3-4 tbsp
tutti-frutti 2-3 tbsp
baking soda 1/2 tsp
baking pdr. 1 tsp
rose essence 1/2 tsp
milk 1/4 cup
buttermilk 1/4 cup
oil 2 tbsp

METHOD
mix well milk, buttermilk, sugar, oil well
add flour little by little mixing well
add rose syrup, by chance your batter is thick, add little more milk to get the correct consistency ( in case you bake in normal microwave, the batter has to be slightly thinner than when you bake in oven)


add tutti-frutti, essence mix well, pour into a greased baking tin , in a pre-heated oven at 180 deg. C for 15-20 minutes, as in my OTG it gets done in about 15 minutes. But, I bake in my normal microwave for about 8-9 minutes, as when I insert my knife in the centre if it comes clean, I switch off the microwave and let it rest for another 2 minutes, before I remove to cut.
 
Notes- I prefer to use normal cooking oil, you may use butter if you prefer.

SPRING ONION PARANTHA

INGREDIENTS
spring onion 2 finely chopped, it was roughly 1/2 cup ( as I made for 5 paranthas)
green chilies finely chopped to taste
salt to taste
whole wheat flour as needed, about 1 cup
hing little
ghee for cooking
water to knead

METHOD
finely chop spring onion and chilies, keep in a bowl
add salt, hing, mix well
add flour mix well, then add water little by little to make soft dough
keep the dough aside for 10-15 minutes
roll into thin paranthas, cook on hot tawa adding ghee on both sides once brown spots appear.
cook till brown on both sides, serve hot with dal, raita or pickle or chutney and curd.
Hubby and self had with tomato chutney and curd, as it is quite filling. Sorry camera battery was down, couldn't take the photo.

OATS-CARROT COOKIES


INGREDIENTS
oats powdered 1 cup approximately
carrot grated fine or I minced in blender about 1/2 cup
brown sugar 1 1/2 tbsp or you may add 3 tbsp or to taste
cinnamon 1/2" or pdr. 1/4 tsp
sugar 1 1/2 tbsp ( as I was feeling lazy to open a new packet, used normal sugar)
ghee/ clarified butter 2 1/2 tbsp ( or soft butter)
Nutella   1 1/2 tbsp approximately
baking pdr.  1/2 tsp 

METHOD
sorry folks, basically never literally measure any ingredient, so approximately 1 cup of oats I powdered first and kept in a bowl
washed and cut carrots into small pieces, then crushed them well in the mixie along with cinnamon piece
I added the minced carrot to oats, added Nutella, mixed well, added brown sugar, mixed well, added ghee , mixed well, then saw it wasn't sweet enough, added some normal sugar,and baking powder,mix well
Pre-heat the oven to 200 deg. C, grease well the baking tray, I just put small blobs of the batter ( it will be thick) on the tray close by, reduced temperature to 170 deg. C and baked for 12 minutes, then saw it was little soft, kept for another 2 minutes, switched off the oven, let it remain in the oven for another minute.
Then gave it hot to taste to hubby, as he is my guinea-pig ! if he approves, then I know, it is good, as he is quite critical, will not taste unless he knows what i give him !

Notes- as for time, it can vary between 12-15 minutes, depending on your oven, mine is a small one, normal OTG.
You may use brown or white sugar, or molasses.
You can even finely grate carrot, as I've pain in my right shoulder due to torn ligament, didn't want to grate, as already I used the mixie to powder oats, so I minced carrots in the mixie.
Nutella is again optional, I just felt like using it, you can use it or peanut butter, or just cocoa powder, then you may need to add more sugar. As none of my recipes, have any hard and fast rule, I like to make do with what I've.
I shared the cookies with my lady friends, they all liked it and asked for the recipe ! It is on the soft side.
