Avil( Flaked rice) Halwa

Ingredients
avil / chiwda, flaked rice  1 small cup
cornflour  2 tbsp
jaggery/ brown sugar/ molasses   1/2 cup
rose syrup 2-3 tbsp ( can be avoided then increase your jaggery or brown sugar more)
nuts and raisins as needed
ghee 2-3 tbsp
water around 300 ml

Method
wash and soak avil in minimum water, so that all the water gets absorbed, mash it well with hand or in a blender
heat a heavy kadai or pan, add 1 tbsp ghee, add the avil, fry well till a nice aroma comes stirring on medium flame
add cornflour mixed in little water, add another 200-250 ml water, mix well, keep stirring till thick
add jaggery, keep stirring till jagery as completely dissolved
add another tbsp of ghee, keep stirring till thick, add rose syrup to taste , mix well, once it thickens, grease a plate and spread on it level it.
sprinkle nuts and raisins fried in little ghee on top, press down, it will set in about 30 minutes, then you can cut and serve.

I was a bit lazy to spread on a plate, as I had just made a vege with brinjal, carrot and potato with spices with minimum oil, then was doing other work, so just gave hubby to taste the halwa and emptied the kadai on to containers. Later, I'ld cut into pieces and give it to my friends to taste, they all liked it, but couldn't guess that it was made with avil, they said with wheat flour and so on.

Healthy Substitute For Cream And Healthy White sauce !

To be honest, I don't like using cream at all. I don't like cakes with icing either. I love sweets, but it should be mild, not like what some of my friends say, my cakes aren't sweet, as anything in excess I feel is bad, whether it is sugar or salt or butter.

I just came across healthy substitute for cream, thought I'ld share it with others, who like me avoid cream, as more and more people are getting calorie conscious and want to eat desserts, but which are healthy, right?

Greek Yogurt
 High in protein and low in fat, Greek yogurt is another brilliant substitute for heavy cream. To achieve a similar consistency to regular cream, all you need to do is to add a bit of water. When using it for baked goods, make sure to avoid the low-fat varieties, since they tend to make the finished product denser and moister than typically desired. It's also important to use a low heat setting when cooking with Greek yogurt, since heating it up too quickly may cause it to curdle.
Even a hung curd will be a good substitute, using normal curd.

Coconut Milk
Coconut milk is a delicious cream substitute that's perfect for vegans, as well as anyone who's got a lactose intolerance. There are quite a number of different consistencies available on the market, all of which will provide you with some essential nutrients that cream is lacking in, such as iron and vitamin C. Thanks to its naturally sweet flavor, coconut  milk is perfect for making ice cream, desserts, and even Thai curries.
Soft Tofu
As a non-dairy cream alternative, few ingredients are as versatile as tofu. Depending on the kind of tofu you get your hands on, it can be used to create quite a number of different consistencies. You can achieve a lighter cream by using soft tofu, while extra-firm tofu will provide you with a far thicker variety. 
Or those who don't like Tofu, you may use normal cottage cheese ( paneer)!
Other Easy Substitutions • Mixing 2 tablespoons of corn starch with a cup of milk will help to thicken many dishes.
• Using half-and-half instead of cream in coffee will drastically reduce your daily calorie and fat intake.
• Adding half-and-half to soups and sauces is a healthy way to achieve a creamy consistency without the extra calories.


Tip for making healthy white sauce
 I prefer not to  use cornstarch or all purpose flour even while making white sauce, I prefer to use less butter than mentioned in the recipe, use wheat flour. For dinner to-night, made wheat pasta with spinach and potatoes , well - please don't say, potato is bad for health, potato cooked with skin, and not deep fried is good even for diabetics. I made sauce by using the same water in which pasta was cooked. I drained and put pasta with spinach and potato in the micro safe dish, then in that pan, mixed a tablespoon of wheat flour well, with little water and added rest of the water, no butter was added, but added 1 tablespoon of cheese spread and one slice of cheese, wee bit of salt, as salt was there in the water in which pasta was cooked, cheese spread and cheese also have salt, add little pepper powder, once the sauce thickened, add to pasta, mixed well. Hubby also liked the pasta, only warmed in the microwave for 2 minutes.

Some people call me miser as far as using butter or oil is concerned, yes, I'm, as I'm more health conscious. I love good food, but at the same time, it should be healthy. Instead of eating a burger, I'ld prefer to eat a bowl of fruits. Or, I prefer to make healthy burger, using chickpeas/ garbanzo beans, beans, carrot, peas, cauliflower and instead of deep frying, shallow fry using minimum oil, as I still don't have air-fryer.

POTATO WITH MUSTARD PASTE

INGREDIENTS
boiled and diced potatoes as needed
salt and chili pdr. to taste
turmeric pdr. 1/2 tsp
coriander pdr. 1 tsp
mustard pdr. 1 tsp mixed in a cup of curd and left to ferment
oil 1 tbsp
saunf 1 tsp
bay leaf 1
coriander leaves finely chopped 1 tbsp

METHOD
in a kadai, heat oil, add saunf, once it crackles, add bay leaf, fry for few seconds, add potatoes and spices, mix well, fry for 3-4 minutes
add the fermented curd-mustard mixture, simmer till oil separates, adding half of the coriander leaves
garnish with rest of the coriander leaves, serve hot with rice/ roti/ bread toast/ dosa.

Guava sauce / chutney

Ingredients
guava chopped 2-3
green chilies to taste
ginger 1/2 tsp
sugar/ gur 2-3 tsp
salt to taste
lime juice 1 tbsp
coriander leaves chopped 4-5 tbsp
water as needed
roasted jeera pdr. 1 tsp

Method
in a blender jar, add all the ingredients, add little water and grind to a smooth paste.
Serve it with dosa, idli, dhokla, roti, bread toast, adai or as a dip with cucumber, carrot, zucchini slices.
In case one wants to store, add oil, while grinding, can be frozen also.

Guava, coriander leaves, green chili, lime juice are all rich in Vitamin  C, which boosts immunity.
ginger aids in digestion.
gur is rich in iron.

Sweet n Spicy Pumpkin

Ingredients
pumpkin cut into big pieces a bowl full
gur/ jaggery  3 tbsp
ginger finely chopped 1 tbsp
jeera 1/2 tsp
saunf  1/2 tsp
hing little
chili pdr. to taste
turmeric pdr. 1/2 tsp
tamarind paste 1 tbsp or tamarind juice 1 cup or to taste
salt to taste
oil 1 tbsp
water as needed
curry leaves few finely chopped
coriander leaves finely chopped 1 tbsp

Method
heat oil in a kadai, add jeera and saunf, once it crackles, add hing, curry leaves, fry for a minute.
add pumpkin pieces, turmeric, chili powders, gur, tamarind water, add enough water, mix well, cover and cook for 5-6 minutes till pumpkin is cooked
remove lid, add salt, and half of the coriander leaves, mix well, check for seasoning
remove, add rest of the coriander leaves and serve hot with rice.

Sweet-spicy Apple Spread

Ingredients
apple chopped 1 cup
brown sugar 4 tsp
chili pdr. 1/4 tsp or to taste
salt wee bit
oil 1/2 tsp
black jeera 1/4 tsp
corn flour 1 tsp
water as needed

METHOD
in a pan, heat oil, add black jeera, once it crackles, add apple, wee bit salt, about 1/4 cup water
once apples are cooked, add sugar and chili  pdr, mix well, smash as it gets cooked.
then mix cornflour with little water, add to the apple mixture, add another 1/4 cup water, mix well, let it cook on slow flame stirring often till thick.
This will go well with bread toast, dosai, idli, adai, roti can be eaten plain if one is bored !

Quick Vada

INGREDIENTS

rice flour 1 cup
urad dal 1/8 cup
chana dal 1/8 cup
jeera 1 tsp
black pepper 1/2 tsp OR you may use pepper pdr. to taste
fenugreek seeds ( methi)  1/4 tsp
dry red chilies 3 or to taste
turmeric pdr. 1/4 tsp
hing little
chili pdr. to taste
salt to taste
warm water 1/2- 3/4 cup
oil to fry

METHOD
roast dals, with jeera, peppercorns, dry red chilies, methi till dal becomes golden, remove, cool and powder
In a bowl, add the ground pdr., rice pdr, hing, turmeric, chili pdr., salt and mix well
add warm water little by little mix well
keep aside for 5 minutes
knead and add some cold water to get dough like roti
rest for 5 minutes
heat oil, wet your hands, take small marble sized dough, flatten in your hands quite thin, deep fry in hot oil till it turns brown, drain, serve hot with chutney of your choice.

Made this today afternoon to have with tea and coffee. I had with the mint chutney I had made yesterday.

Hubby loves vada, normally what we buy has loads of oil, so preferred to make at home, without having trouble to grind and it didn't take in much oil. Don't let the dough rest for more than 5 minutes, the 2nd time you mix with normal water.

MULTIGRAIN VADA

INGREDIENTS
multigrain flour 300 gm
sour curd 3 tbsp
turmeric pdr. 1/4 tsp
green chilies finely chopped to taste or can use chili pdr.
hing little
onion small 2
salt taste
water as needed to make the dough
oil for frying

METHOD
in a big bowl, add flour, salt,green chilies, turmeric, hing powders well
add sour curd, mix well,sprinkle little water if needed to make a dough like for puri
rest the dough for 10 minutes
knead well again, heat oil in a kadai
make big marble sized balls and keep on a plastic sheet, leaving space in between
wet your hands if need be, spread like small thick puri, deep fry on medium flame till brown on both sides, drain on paper napkins.
serve hot with chutneys of your choice.

AMLA RICE

INGREDIENTS
cooked rice 2 cups
amla washed, chopped 1/2 cup
peanuts  3 tbsp
ginger finely chopped 1 tbsp
green chilies finely chopped to taste
curry leaves finely chopped 1 tsp
coriander leave finely chopped 2 tbsp
oil 1 tbsp
ghee 1 tbsp
mustard seeds 1/2 tsp
urad dal 2 tsp
chana dal 2 tsp
hing little 
turmeric pdr. 1/2 tsp
sesame seeds 2 tsp roasted
salt to taste

METHOD
In a kadai/ pan, heat oil and ghee 1 tsp
add mustard seeds, once it crackles, add the dals and peanuts fry till dals give nice aroma
add ginger, chilies, curry leaves, fry for a minute
add chopped amla, turmeric, hing, fry on low flame for 3-4 minutes adding half the quantity of coriander leaves
add rice, salt to taste, rest of the ghee mix well
serve garnished with sesame seeds and rest of the coriander leaves, along with roasted papad and cucumber-onion-tomato raita

Health benefits
this is a simple complete meal along with mixed vegetable raita 
as you get nutrients from the vegetables, fibre, Vitamin C  from amla and coriander leaves Vitamin E from curry leaves, protein from dals and peanuts, curd, calcium from curd in raita.
Ginger helps in digestion, sesame seeds are also rich in calcium.

Amla ( Indian Gooseberry) sweet spread / halwa


INGREDIENTS
amla/ nellikai 1 
corn flour 2 tsp
milk 1/2 cup
water 1/4 cup
brown sugar 10 tsp/ 5 tbsp( gur/ molasses/ sugar substitute can be used too).
ghee 1 tsp

METHOD
wash, wipe amla well,grate it carefully, discard the seed, in case you find it difficult to grate, chope into pieces, run through mixie and can be used too.
heat ghee in a heavy kadai or non-stick pan, add amla, fry on low flame for 3-4 minutes, till water evaporates
in the mean time, mix cornflour with water or milk to a smooth paste
add cornflour mixture, water/ milk, add brown sugar, mix well
keep stirring on medium flame till it becomes thick
remove, it can be used as a spread with roti, bread, or as a dip with fruits, dosai, adai or simply eat it plain, if you've a sweet tooth like me !
Since amla is in season, I found some nice big ones, bought it to make pickle, then tried making the dessert with 1 amla, as hubby loves pickle, I like to have the pickle on those days when we get spinach to eat to absorb the iron from spinach !
I shared this with my friends today, they all liked it and it got over in 2 minutes !

Health benefits
amla is the riches source of Vitamin C, one amla gives us enough vitamin C for the day.
luckily, it is one of those Vitamins which isn't affected by heat, so by cooking too, the vitamin content doesn't get lost.
milk a good source of protein and calcium, brown sugar is healthier than white one Or you may use vellam/ gur syrup, then you get iron, or can use sugar substitute. 
One also gets some fibre from amla.

Substitute for sour cream

Substitute one of the following for each 1 cup of sour cream:
  1. For baking: 7/8 cup buttermilk or sour milk plus 3 tablespoons butter.
  2. For baking: 1 cup yogurt plus 1 teaspoon baking soda.
  3. For baking: 3/4 cup sour milk plus 1/3 cup butter.

HEALTHY RAGI DOSA

INGREDIENTS
ragi flour 1 cup

rice flour 1/2 cup
rava 1/2 cup
buttermilk 1 cup
water as needed
salt to taste
oil to cook
coriander leaves finely chopped 1 tbsp

for seasoning
oil 2 tsp
mustard seeds 1/2 tsp
urad dal 1 tsp
jeera 1/2 tsp
ginger finely chopped 1/2 tsp
green chilies finely chopped to taste
curry leaves finely chopped 1 tsp 
hing little

METHOD
mix the flours and rava well, add salt and buttermilk little at a time to get dosa batter
rest for 10 minutes
for seasoning
heat oil in a small pan/ kadai, add mustard seeds, once it crackles, add urad dal and jeera, once dal is golden, add green chilies, ginger, curry leaves, fry well, add hing, pour over batter
mix the batter well adding coriander leaves
heat a tawa, smear oil, spread evenly, spread the batter to get thin dosa, put oil all around, keep the flame small, cover and cook till bottom is crisp, serve hot with chutney and milagai podi.

Health tips
you can add some grated carrots, finely chopped spinach, or spring onion to make it still healthier.
ragi is rich in iron and calcium, curry leaves are good source of Vitamin E, that is why, I prefer to finely chop and put, or else, people discard the leaves, losing out on precious vitamin. Coriander leaves and green chilies are good source of vitamin C. ginger aids in digestion, hing prevents formation of gas and also aids digestion.

HEALTHY CUTLET

INGREDIENTS
spinach blanched and squeezed  1/2 cup
cauliflower florets blanched 1/2 cup
green peas blanched 1/2 cup
chana dal cooked without much water 1/2 cup
lime juice 1 tsp or to taste
bread crumbs as needed
chana masala 1/2 tsp
garam masala 1/2 tsp
green chilies 2-3  as per taste
ginger 1 tsp chopped
coriander leaves chopped 2 tbsp
salt to taste
oil for shallow frying

METHOD
in a mixer jar, add the dal, ginger, chilies, blend, add the vegetables, blend to a slightly coarse paste
remove, add salt, coriander leaves, lime juice , masala powders, mix well adding bread crumbs to bind. shape cutlets in desired shapes, roll in bread crumbs, shallow fry till brown on both sides.
serve hot with chutney/ ketchup.

INSTANT IDLI

INGREDIENTS
chiwda/ avil pdr.  1/2 cup
curd 1/2 cup
idli rava / rava 1/4 cup
water as needed
salt to taste
 Eno fruit salt 1/2 tsp

for seasoning
oil 2 tsp
mustard seeds 1/2 tsp
urad dal 1 tsp
chana dal 1 tsp
hing little
green chilies finely chopped 1 tsp
curry leaves finely chopped 1 tsp
cashew nuts chopped 2 tbsp

METHOD
mix avil/ chiwda with curd mix well, keep aside for 5 minutes
add rava, mix well, add enough water to make a thick batter adding salt to taste
rest the batter for 10 minutes
for seasoning, heat a small pan/ kadai, add oil, once hot add mustard seeds, once it crackles, add the dals, once they turn golden, add cashew nuts, hing, curry leaves, green chilies and fry for 2 minutes on low flame, add to the batter, add Eno and mix well. 
This batter will be thicker than the normal idli batter
grease idli plates, put batter, steam for 5-7 minutes
serve hot with chutney and milgai podi

MASALA PURI WITH CHEESEY DIP

INGREDIENTS
for puri
wheat flour 1/2 cup
all purpose flour/ maida  1/2 cup
rice flour 3 tbsp
roasted jeera pdr. 2 tsp
pepper pdr. to taste
sesame seeds 1 tsp
hing 1/4 tsp
salt to taste
ghee 2 tsp
oil 2 tsp
milk as needed to make dough
oil for frying

for cheesey dip
oil 2 tsp/ butter
maida 1 tsp or corn flour 1 tsp / wheat flour( atta)
mixed herbs 1 tsp
milk 1/2 cup 
cheese spread  1/4 cup
salt little ( as cheese as salt)
pepper pdr.  to taste

METHOD 
for puri
add the flours, seasoning, ghee, oil, mix well till it resembles like bread crumbs
add milk little at a time, mix well and knead to form puri like dough
rest the dough for 10 minutes, knead well again
heat oil in a kadai, you can either roll out one big roti, prick it all over, cut into small rounds, keep all the puris ready to fry
fry in medium flame till golden and crisp, drain and keep

for dip
heat a pan, add oil/ butter, fry flour well, add mixed herbs, seasoning, milk, mix well as there should be no lumps, once it thickens, remove, add cheese spread, mix well. serve with puris.

DATE N CHOCOLATE

INGREDIENTS
dates soaked and ground 1/2 cup
dark chocolate 60 gm
milk 2 tbsp
whipped cream 100 gm
ghee 1 tsp

METHOD
add ghee in a pan, add dates paste, keep frying till thick, add dark chocolate and milk, cook in low flame stirring continuously till thick, remove from gas
once it has cooled, add whipped cream, fold well
chill and serve in small glasses or cups, top with finely chopped nuts.

RICE VEGETABLE PANCAKE

INGREDIENTS
rice flour  1/2 cup
curd  1/4 cup
cucumber grated 2
spinach finely chopped 1 cup
spring onion finely chopped 1
coriander leaves finely chopped 2 tbsp
turmeric pdr. 1/2 tsp
water as needed
salt to taste
green chilies finely chopped to taste
oil or butter to cook

METHOD
grate cucumber, add salt, keep aside for 10 minutes, squeeze it well
add rice flour, curd mix well
add rest of the ingredients except butter/ oil, mix well, adding water to make thin batter
rest the batter for 10-15 minutes
heat a non-stick/ heavy tawa smear oil/ butter, make small pancakes, turn once bottom is done, spread some fat, cook till nice and crisp on both sides.
serve hot with salad of your choice and pickle
the squeezed out cucumber water can be added to salad or you can simply drink it !

APPLE PICKLE

INGREDIENTS
oil 1 tbsp
ginger 1" finely chopped
green apple grated  2
salt to taste
sugar 1/2 cup
vinegar 1 tbsp
raisins 1/4 cup
pickle masala pdr. 1/4 cup or less if you don't want it spicy or may use chili pdr. too

METHOD
heat oil in a kadai/ pan, fry ginger well, add raisins, fry well till it puffs up ( it is necessary for raisins to puff up well, if you want your pickle to last)
add apple fry well in low flame stirring
add sugar, keep stirring, once it thickens little, add salt, vinegar and masala or if you want, you may add little red chili pdr. too, cook till it thickens well.
remove, cool and store in a sterilised bottle.
it will go well with roti, bread toast, dosai, adai, and whatever you feel like !

Cooking tip- Whenever you use raisins in a recipe to store for long, make sure that it puffs up well, nice big and round like grape or else, your recipe will get spoiled quickly.

INSTANT RAGI ( FINGER MILLET) UTTAPAM

INGREDIENTS
rava 1/2 cup
ragi flour 3/4 cup
curd 1 cup
water as needed
onion 1/2-3/4 cup finely chopped
green chilies finely chopped to taste
ginger finely chopped 1 tsp
curry leaves finely chopped 2 tsp
salt to taste
hing little
ajwain / omam little
Eno fruit salt 1/2 tsp
oil to cook

METHOD
In a bowl, add rava, curd, beat well till you get a thick batter, so rava becomes soft, add ragi, mix well, add rest of the ingredients except oil and Eno fruit salt, adding water as needed to make thick batter. Rest the batter for at least 10 minutes.
Heat a tawa, smear little oil, add Eno fruit salt, mix well, spread some batter, put little oil, with a ladle, make some holes all around, for the uttapam to cook well on medium flame, once the bottom is well cooked, flip over, put some oil,make little holes, so steam will come out and help it to cook well. serve hot with chutney of your choice.

Health tips- ragi is rich in calcium and iron, green chilies are good source of Vitamin C, curry leaves have Vitamin E. You may add some grated carrot, capsicum too, if you prefer to make uttapam.

Bengal gram dal payasam/ kheer

Ingredients

Milkmaid 1 tin           
jaggery ½ cup       
Bengal gram/ chana dal 1 cup        
cardamom powdered ¼ tsp
Coconut 1 grated          
cashew nuts 10     
ghee 1 tbsp            
raisins 15

Method
1)      Cook dal in 3 cups of water till soft . mash it well.
2)      Melt jaggery in 1 cup of water & strain, once jaggery has melted
3)      Reserve 2 tbsp of coconut grated, from the rest extract 1 cup of thick milk & 2 cups of thin milk.
4)      Mix jaggery syrup with dal & 2 cups of thin coconut milk, add cardamom pdr.
5)      Cook this mixture on a slow flame for a few minutes. Add milkmaid & stir well. To this, add 1 cup of thick coconut milk.
6)      Fry nuts & raisins in ghee, remove, fry grated/ chopped coconut & remove.
7)      Mix the nuts, raisins, coconut along with the ghee to the payasam. stir, remove from fire & serve hot/ cold.

Banana halwa

Ingredients

Banana 12 medium sized          
milkmaid 1 tin          
ghee 2 tbsp       
nuts & raisins

Method
1)      Peel & mash the bananas well.
2)      Heat ghee in a kadai, add mashed bananas & cook till tender & light brown.
3)      Add milkmaid & keep stirring on a low flame till the mixture becomes a smooth mass & oozes out ghee.
Spread on a greased plate, top with nuts & raisins. Set aside to cool, cut & serve
