Carb and Gluten Free Zucchini Noodles Recipe

Zucchini Noodles are often referred to as Zoodles. Whatever you choose to call them, delicious is probably the best description!
They look wonderful plated up with your favorite dish and you can even mix them with yellow squash when in season. So, before we get into how to make your Zucchini Noodles, we thought we would run through some of the many health benefits.

Ingredients

Preparation Time 35 minutes Cooking Time 10 Minutes
  • 6 Zucchini
  • 2 Teaspoons Salt
  • 3 Tablespoons butter
  • 1 Clove Garlic. minced (optional)
  • salt and black pepper to taste
  • 1/4 cup grated Parmesan Cheese

Cooking Method

Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
Heat margarine in a large skillet over medium-high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.

Carrot Apple Zucchini Bread With Cream Cheese

Ingredients

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 3 eggs room temperature
  • ¼ cup fresh orange juice
  • 1 tbsp vanilla extract
  • cups all-purpose flour
  • ½ tsp salt
  • tsp baking powder
  • ¾ tsp baking soda
  • 1 tsp cinnamon
  • pinch of ground cloves
  • pinch of ground nutmeg
  • 2 cups shredded carrots
  • 1 cup shredded zucchini
  • 1 cup diced peeled apple (Granny Smith, Fuji, whatever you have on hand)
  • ½ cup pecans chopped

Cream Cheese Glaze/Frosting

  • ½ cup cream cheese softened
  • ¼ cup butter softened
  • 2 - 3 cups powdered sugar
  • 1-3 tbsp orange juice as needed

Instructions

  • Preheat the oven to 350 degrees.
  • Grease and flour 2 8x4" loaf pans. Line with parchment paper and set aside. (Or use baking spray with flour in it)
  • Place zucchini in a large kitchen towel. Bring up the four corners and twist. Squeeze the towel to extract all the liquid from the zucchini, or as much as you can. Set aside.
  • In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, cloves, and nutmeg together. Set aside.
  • In a separate large bowl, whisk together the butter and sugar.
  • Add eggs, orange juice, and vanilla and whisk until combined.
  • Fold dry ingredients into wet ingredients along with the shredded carrots, shredded zucchini, apples, and pecans.
  • Pour into prepared pans.
  • Bake until golden brown, 55 to 60 minutes, or until loaves spring back when gently pressed with fingers.
  • Let cool completely before icing.

Cream Cheese Glaze/Frosting

  • Cream together cream cheese and butter with a hand mixer.
  • Add in 2 cups of powdered sugar and continue mixing. Drizzle in orange juice until desired consistency is achieved.
  • Frost bread and enjoy!

Notes

The carrots and zucchini in this recipe are interchangeable. Feel free to use less or more of each. You just want three cups total.

Lemon Zucchini Cake

Ingredients

    1 1/4 cup granulated sugar
    6 tbsp extra virgin olive oil
    2 eggs room temperature
    1/3 cup vanilla almond milk
    2 tbsp lemon juice
    1 tsp vanilla or almond extract
    2 cups cake flour can substitute AP flour following directions here
    1 1/4 tsp baking powder
    1/2 tsp kosher salt
    1 1/2 cup shredded zucchini drained and squeezed dry
    2 tbsp lemon zest

Glaze

    1 cup powdered sugar
    1-2 tbsp lemon juice

Instructions
    Preheat oven to 350F.
    Spray a loaf pan with baking spray and line with parchment paper. Set aside.
    Combine flour, baking powder, and salt in a medium bowl and whisk together. Set aside.
    In a large bowl, combine the sugar and olive oil. Whisk to combine.
    Add eggs and almondmilk and whisk together.
    Add lemon juice and vanilla extract and stir to combine.
    Add flour mixture and stir just until incorporated.
    Fold in zucchini and lemon zest.
    Pour batter into the prepared pan and bake for 45 to 55 minutes or until an inserted toothpick comes out with moist crumbs. The top of the cake should look dry.
    Place the loaf on a cooling rack and cool for 15 minutes. Use the parchment paper to carefully life the cake from the pan. Let cool completely on rack.

Glaze

    In a small bowl, combine powdered sugar and lemon juice. Whisk until smooth.
    Drizzle the glaze over the cake.
    Slice and serve.

Methods For Stopping Avocado Turning Brown

There are lots of suggestions in circulation and most of them fail miserably. Some of the recommendations include the following.

    Lemon And Lime Citrus Bath
    Leaving The Pit In and covering with skin.
    The Water Method which is used by Chefs
    Covering Avocado with plastic wrap

Well, according to the Huffington Post it’s all a big waste of time! They road tested all the ideas and actually found that leaving the Pit was probably the best result.

Soaking the avo’s in water for up to 4 hours prior was the worst result and the other methods made no difference.

So, after road-testing all 4 popular methods, it was a big fat fail! As you can see by the photos above, the results 24 hours later are far from encouraging.

 Stop Avocado Turning Brown Trick

We were excited to find this awesome tip from The Kitchn. They suggest placing your unused avocado in a plastic container with a piece of chopped onion.

Apparently, it will keep your Avocado fresh for days. They also said that this process works for Guacamole. Simply sprinkle uncut onion on top of your dip, and it works a treat.

As you can see by this helpful infographic, you should be looking for a green-brown or dark brown skin tone if you want a ready to eat Avocado.
