Pickled Mangoes

Ingredients for pickled mango: 
 
Cinnamon - 1 stick 
 
Ground cumin - 1 tsp. 
 
Peppercorns - 1/2 tsp. 
 
Cardamom pods - 3 (crushed) 
 
White vinegar - 3/4 cup 
 
Water - 3/4 cup 
 
Sugar - 1/4 cup 
 
Lemon juice - from 1/2 lemon 
 
Ginger root - 6 slices 
 
JalapeƱo - 2 small 
 
Salt - 1 tsp.
 
Mango - 2 (ripe and sliced to 1/2 inch thick sticks) 
 
Method of preparing the pickled mango: 
 
Toast the cinnamon, cumin, peppercorns and cardamom for 4 minutes. 
 
Add them to a pot and combine with the rest of the ingredients, leaving the mango outside for now. 
 
Cook over medium heat for 5 minutes. 
 
Let the sugar dissolve but don't boil.
 
Divide the mango slices into jars and pour the liquid over. 
 
Once cooled, lid and chill in the fridge overnight. Serve the next morning!

Healthy Apple Pancakes

Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1 Tablespoon of baking powder
  • 2 Tablespoons of white granulated sugar
  • pinch of salt
  • 1 egg
  • One cup of milk
  • 1 medium-size Granny Smith apple, grated

METHOD

Add the flour, baking powder, sugar, and salt to a mixing bowl. Mix until well combined.

Place in the egg, milk, and apple. Whisk once again until a batter forms.

Heat a pan to medium heat and add in the butter.

Scoop about 1 cup of the mixture in and fry until golden brown on one side.

Flip and cook on the other side until golden brown.

Plate up and top with syrup and butter. You can add cinnamon and nutmeg if desired.

Serve and enjoy your healthy apple pancakes.

Apple Butter

To avoid any confusion, it’s important to note that apple butter is not an actual variation of butter. It’s homemade applesauce that has been cooked longer, which intensifies the flavor and gives it a caramelized color. It is then pureed for a super-smooth texture, which all results in a concentrated, creamy, and smooth spread. It’s fairly easy to make, too, so don’t hesitate to give it a try!

Apple Butter 

Ingredients for Apple Butter:
 
Apples - 6 1/2 pounds 
 
Granulated sugar - 1/2 cup 
 
Brown sugar - 1/2 cup 
 
Ground cinnamon - 1 tbsp. 
 
Ground nutmeg - 1/2 tsp. 
 
Ground cloves - 1/4 tsp.
 
Salt - 1/4 tsp. 
 
Vanilla Extract - 1 tbsp. 
 
Method of preparing the Apple Butter:  
 
Peel, slice, and core the apples. Then place the apples in a slow cooker.
 
In a medium bowl, whisk together the sugar, cinnamon, nutmeg, cloves, and salt. Sprinkle over the apples and stir gently to combine. Cook on low heat for 10 hours. 
 
Stir in vanilla extract, breaking up any large chunks of apples that remain. Cover and cook for an additional 2 hours. 
 
Remove cover and use an immersion blender to puree the apple butter until completely smooth. Alternately, you could puree in batches in a food processor or regular blender. 
 
Allow the mixture to cool to room temperature, then spoon into jars and store in the refrigerator or freezer. 
 
Chef's Tip: This recipe yields about 6 cups of apple butter and will last for about a month in the refrigerator and up to 6 months in the freezer.

Cucumber Sandwich

Cucumber Sandwich 

Ingredients for Cucumber Sandwich: 
 
Cream cheese - 8 oz. (softened) 
 
Mayonnaise - 1/2 cup 
 
Italian dressing - 7 oz. 
 
French bread - 2 loaves (cut into 1 inch slices) 
 
Cucumbers - 2 (medium) (sliced) 
 
Dill - 1 pinch 
 
Method of preparing the Cucumber Sandwich:  
 
Mix together the cream cheese, mayonnaise and Italian dressing mix in a medium bowl. Refrigerate for 6-7 hours or overnight. 
 
Spread the cream cheese blend onto the slices of French bread. Sprinkle with dill and top with a cucumber slice. The great thing is that the cream cheese mixture keeps for about a week in the fridge. So, you can make them over and over again! 
 
Chef's Tip: You can use a glass or a cookie cutter to slice the bread neatly as shown in the photo.

Oriental Orange-Sesame Salad Dressing

Ingredients for Oriental Orange-Sesame Salad Dressing: 
 
Freshly squeezed orange juice - 1/2 cup (about 2 large oranges)
 
Red wine vinegar - 1/3 cup 
 
Sesame seeds - 2 tbsp. 
 
Chinese hot mustard - 1 tbsp. 
 
Sugar - 1 tsp. 
 
Kosher salt - 1/4 tsp. 
 
Garlic - 1 clove (minced) 
 
Canola oil - 2 tbsp. 
 
Sesame oil - 1 tsp. 
 
Method of preparing the Oriental Orange-Sesame Salad Dressing:  
 
Mix the first 7 ingredients in a medium bowl, and then slowly drizzle oils into the juice mixture, stirring constantly with a whisk.
