Immunity boosting laddoo

Ingredients
¼ cup seed mixture (sesame seeds - black or white) roasted
¼ cup roasted peanut
¼ cup nuts (walnut/almond/cashew)
1/4 cup roasted flax seeds
 1/4 cup dates and raisins
3-4 tablespoon of honey or jaggery powder
¼ teaspoon cinnamon powder

How to make
Grind the nuts, seeds and peanut into a fine powder, adding dates, raisins. Now add the cinnamon powder, finely chopped dates and mix well. Mix and roll this into small balls.
You can also add other seeds like watermelon, pumpkin, chia and poppy seeds.
These laddoos are not just rich in zinc but also omega 3 fatty acid, proteins, magnesium and selenium. The vitamin B6 in the nuts also helps in lifting up the mood.

How to store fresh coriander leaves for a long time

Normally, we've the tendency to buy a big bunch of coriander leaves, especially if we get it cheap. Then storing them for long has been a problem. Now, a simple way, is, cut off the roots, then slowly discard all the bad leaves and unwanted leaves that may be there. Then wash the leaves well 3-4 times in fresh water, drain, then spread it on thick layers of cloth, in the shade, for it to dry completely. Then finely chop them. To store, fold kitchen towel  or paper napkins and put in the bottom of the container to cover it well. then put the dry leaves, cover the bottle with a plastic sheet and close the lid. The leaves will be ready to use for a long time.

Quick Mango-Rice Pudding

There was some left-over rice, thought of trying something different than making sweet pongal or plain rice payasam. I had some cut mango pieces in the fridge. So, used mango, rice, milk, sugar to make this yummy pudding.

INGREDIENTS
left-over rice  1 cup
mango pieces  1/2 cup
milk  300 ml
sugar 2 tbsp or to taste
mango pieces on top
nuts as desired

Method
mash the rice well, add milk, mango, sugar, let it boil, till sugar has melted and it has thickened little. You fry nuts in little ghee or just chop and put. Serve with fresh mango pieces, when cool.


Notes- you can use any amount of rice you've, more milk and mangoes if you want, depending on for how many people you're making for. Add sugar to taste. I don't know how to load photo from cellphone to my mail or blog, if anyone out there can guide me, I'll be very happy, thanks.

sorry folks, there was problem with our laptop, after new version was loaded, I'm not able to load photos from my camera, have to figure out, also been very busy, as hubby had a spinal surgery just a fortnight back, so looking after him. Made this dessert, as he is anemic now, as he had lost a lot of blood during surgery, his Hb levels are low now. So, feeding him more iron and calcium rich foods, dates, nuts, ragi- finger millet flour. To build his muscles making chundal, that is boiling dry beans or whole green moong dal, then season it with mustard seeds, green chilies, hing and salt to taste.

Cooking tips 4


1) To easily open the lid from a fresh jam/ pickle bottle, remove the plastic cover put on top, then lightly tap all around the top of the lid with rolling pin, as then the air inside comes out, you can open the bottle easily. I normally used to show the lid over flame, then put a cloth on top to open the lid.

2) To pressure cook rice, wash 1 glass rice, add 1 ½ glasses of water, cover the lid, cook till one whistle comes, switch off the gas, once pressure is released on its own, when you open the lid, you can see rice is cooked and grains aren’t sticking to each other. If it is thicker variety, you may need 1 3/4 glass of water.

3) To make tasty moong dal, roast the dal for 6-7 minutes on low flame stirring continuously, cool and store, insects will not come and when you cook, it will be tastier than when you don’t roast it.My mother used to roast the dal when she used to make pongal/ kichdi also.

4) To preserve sooji/ semolina for long, roast it in medium flame for 6-7 minutes, stirring continuously, cool and store, next time you want to upma/ keasari/ sheera, it is faster and also insects won’t come.
