DESI FONDUE

INGREDIENTS

butter   1 tbsp
maida  1 tbsp
milk  1 cup more if too thick
olive oil  2 tbsp
chilli flakes   1/2 tsp or to taste
salt to taste
cheese grated  3-4 tbsp
tomato paste  1 tbsp


vegetables
potato boiled, peeled cut into cubes
cauliflower cut into florets, blanched
capsicum cut into big pieces
tomato pieces
paneer cubes
or you can use whatever vegetable you like

METHOD

in a pan, heat oil, add maida, fry well, add chilli flakes, tomato paste, mix, add milk, mix well, so there are no lumps, bring to a boil, add cheese, mix well, remove, put on fondue dish, light a fire
keep the vegetables in a plate, keep the long fondue forks to use
so enjoy dipping your favourite veges in the fondue and enjoy.

ps- those who may not have the fondue dish and the fire to go with it, no problem, you make the sauce, have the vegetables ready, serve hot, one can use forks, if one isn't too fussy, as what you want is the taste mainly !

Healthy And Unique Chocolate Cake

Ingredients


  • 3/4 cup all purpose flour or wheat flour (120g)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup unsweetened cocoa powder (20g)
  • 2 tbsp ground flax. You can omit; the cake just won’t rise as much.
  • 1/3 cup  sugar (64g)
  • 1/8 tsp sugar substitute (or 1/4 cup more sugar)
  • 1/2 to 1 cup mini chocolate chips (60-120g) (Do not omit. The recipe just won’t be the same if you do.)
  • 1 tbsp pure vanilla extract
  • 2 loosely-packed cups frozen cauliflower, thawed completely but not cooked (250g) (Or omit and sub 1 cup canned pumpkin, if cauliflower is too weird for you. I might even like the pumpkin version better!)
  • 1/2 cup milk of choice. For pumpkin version, use just 1/3 cup milk (or 1/2 cup if omitting oil).
  • 3 tbsp oil (or omit and increase milk to scant 2/3 cup, for a lower-fat option)
Method

Preheat oven to 350F, and grease an 8×8 square baking dish. Combine all dry ingredients in a bowl, and mix very well. Combine all liquid ingredients and the cauliflower in a food processor and blend until super-smooth, so there are NO lumps whatsoever.  Pour wet into dry, and mix until just combined, then pour into prepared pan and bake 30 minutes.  or till the knife when inserted in the middle comes out clean. Let cool completely. After a day, this cake is best stored in the fridge.

Spicy cauliflower


Spicy cauliflower

Ingredients
Small cauliflower 1        onion 1 big     salt & chili pdr to taste      oil 2 tsp
Turmeric pdr ¼ tsp           jeera/cumin 1 tsp

Method
1)      wash well & cut cauliflower into small florets/
2)      chop onion fine
3)      in a thick pan, heat oil, add cumin, once it crackles
4)      add onion, fry with a pinch of salt lightly
5)      add cauliflower, turmeric, salt & chili pdr
6)      mix well, add about 2 tbsp of water, keep the gas in sim
7)       cover & cook for about 4 minutes, toss & see if it needs to be cooked more
8)      This depends on how small/ big ,you’ve cut cauliflower into florets
9)      Once cooked, remove, garnish if desired with some fresh coriander leaves.

This goes well with roti, paranthas & bread too. You can cook this in microwave too, where you’ll need a minute to fry onion, then add florets & rest of the ingredients, sprinkle some water & cover & cook for 3-4 minutes.
