Egg-less Chocolate Cake

Ingredients

all purpose flour  1 heaped cup
baking pdr. 1 1/2 tsp
butter melted 3 tbsp
brown sugar  1/2 cup or to taste
vanilla essence  1/2 tsp
sweet chocolate/ drinking chocolate pdr.   3 tbsp
milk  3-4 tbsp or more as needed
curd  3-4 tbsp
walnuts as needed

Method

in a bowl add butter, sugar, beat well
add flour, baking pdr., mix well, add milk and curd, beat well, see if it is of pouring consistency, it shouldn't fall too quickly from the beater/ spoon, if too thick, add some more milk and curd, beat well
add vanilla essence, some chopped nuts, mix well
pour into a greased baking tray
bake in a pre-heated oven at 160 deg. C adding some chopped walnuts on top for 20-25 minutes, or when you prick in the centre with a knife, it should come clean
the cake was so soft, that my son and my daughter-in-law loved it, finished half of it while it was still hot, my grandson also loved the cake !

Garlicky Broccoli Pasta

Ingredients
Garlic, 1 head, with cloves peeled and finely chopped
Broccoli, 1 head, chopped into bite-size pieces
Whole wheat spaghetti, cooked according to package directions

Method 
 
Sauté garlic (as much as you’d like) in a little olive oil. Meanwhile, steam broccoli lightly, and then sauté it briefly with the toasted garlic. Add red pepper flakes if you like a little heat. Toss the mixture with whole wheat pasta. Top with a sprinkle of Parmesan cheese, and serve. 

Health Benefits: Broccoli has fiber and a natural chemical called sulfurophane, which may help keep blood vessels healthy. Garlic helps curb inflammation in your body. And whole wheat pasta is a tasty source of heart-healthy fiber.

Black Bean Salsa Taco

Ingredients

1 can black beans, rinsed and drained
1 fresh tomato, chopped
Frozen corn, 1 cup, thawed
Whole wheat tortillas, 1 per person, or 15 corn tortilla chips per person

Method

Combine ingredients, and season with salt and pepper. Serve 3/4of a cup with 15 corn tortilla chips, or spoon the salsa into a wheat tortilla for a simple lunch taco.

Health Benefits: The beans and veggies here provide a hefty dose of fiber. Beans help lower total blood cholesterol and LDL cholesterol levels.

Hummus

Ingredients
1 can chickpeas'/kabuli chana cooked, drained
1 teaspoon of sesame tahini
Lemon juice
1 clove of garlic, minced
Olive oil

Method
 
Combine ingredients in a blender. Process until smooth, adjusting proportions to taste. Add a little water to thin the dip. Season with salt and pepper. Serve 1/4 cup of hummus with baby carrots.

Health Benefits: Chickpeas and carrots are loaded with cholesterol-busting soluble fiber. Garlic can help curb inflammation and may slow blood clotting.

Muesli- make your own

Ingredients
Old-fashioned rolled oats, 1/2 cup
Raisins or other dried fruit, 1/2 cup
Raw walnuts or almonds, 1/2 cup
1 apple, grated
Plain, low-fat yogurt, 3 cups

Method
Combine ingredients. This makes enough for several servings, and tastes even better in a day or two, as liquid from the yogurt and apple softens the oats.

Health Benefits: Soluble fiber in the oats and apple help lower LDL or "bad" cholesterol, while the nuts contain heart-protective unsaturated fats.

Blueberry Smoothie

Vanilla nonfat Greek yogurt, 1 cup
Frozen blueberries
1 or 2 tablespoons of ground flaxseeds
Whir it all in a blender with a few drops of vanilla extract. Add a splash of apple juice if it’s too thick. Drink at once.

Benefits: Flax-seeds are a good source of cholesterol-lowering soluble fiber. They also have omega-3 fats, which can lower your triglyceride levels. Plant chemicals in blueberries may help protect blood vessels against damage. And Greek yogurt contains more protein than other yogurt, so it keeps you satisfied and less likely to overeat.

Green Sour Apple Chutney

Ingredients
green apple peeled , cored and chopped fine/ grated
turmeric pdr.  1/4 tsp
chilli pdr. and salt to taste
oil 2-3 tbsp depending on the quantity of apple used
methi/ fenugreek pdr. 1 tsp
cumin/ jeera  1 tsp

Method
in a heavy pan, heat oil, add cumin, once it browns, add hing, turmeric pdr, chilli pdr., and apple , mix well, cover the pan, keep on low flame, stir every now and then
keep cooking till it gets thick, add salt and methi pdr., mix well
remove once the mixture is thick

ps- this can be preserved once cool in a bottle in the fridge for a week- 10 days
this goes well with bread toast, roti, dosai, idli, can be mixed with hot rice also.

Dry Coriander Chutney

INGREDIENTS

coriander leaves a big bunch, cleaned, washed well,  drained and chopped
chana dal  1 cup
urad dal  1 cup
red chillies 10-15 or as per taste
salt to taste
hing 1/4 tsp
tamarind a small marble size or more depending on the taste
oil wee bit

METHOD
in a pan, add wee bit oil, chana dal, red chillies, fry till the dal is light brown, add the urad dal and fry stirring continuously till both the dal are brown and a nice aroma comes
add hing and tamarind, remove from fire
once cool, powder the dals, chillies, tamarind coarsely
add the chopped coriander leaves and salt
powder till fine or slight coarse
this goes well with bread toast, idli, dosai, can be mixed with hot rice, roti
if dry, this last for months in the fridge if handles carefully ( only if it lasts that long !)

Egg-less, Healthy Banana Orange Bread

INGREDIENTS

banana 1 big ripe, mashed well
orange 1 big, peeled, de-seeded, skin removed
sugar roughly 1/2 cup or to taste
baking pdr. 1 heaped tsp
curd 2 tbsp
milk 2-4 tbsp
butter  2 tbsp
oil  1 tbsp roughly
wheat flour/ atta  1 heaped cupful
nuts and raisins as desired
cinnamon pdr. 14 tsp
clove pdr. 1/8 tsp

METHOD
in a bowl, add mashed banana, orange, sugar, butter, oil, mix well
add flour, baking pdr., and the spices, mix well
add curd and milk, the mixture should not be too thick, if so, add little more curd and milk
add nuts and raisins if desired
pour into a greased baking dish
bake in a pre-heated oven at 180 deg. C for 12-15 minutes till a knife inserted comes out clean.
this tastes good hot/ cold, if left over, cover in a foil or store in air-tight container in the fridge.

healthy sandwich

Ingredients

bread slices as needed
tomato ketchup
cheese grated
onion finely chopped
tomatoes chopped finely
capsicum chopped fine
spinach blanched and finely chopped
corn cooked
salt and pepper pdr. to taste
butter

spread butter on bread slices, spread some tomato ketchup, sprinkle some cheese, add the chopped veges, top with more cheese, salt and pepper
bake in pre-heated oven at 160 deg. C for 5 minutes or till cheese melts
this will go well with some fruit juice or fresh slices of fruits

Attractive vege rice for kids

Ingredients

rice  1 cup wash and soak for few minutes
water  2 cups
onion  diced  1 big
carrots diced  1/4 cup
peas 1/4 cup
butter  2 tbsp
potatoes 2 small boiled, peeled and mashed
cream  1 tbsp
salt to taste

Method
in a pressure cooker, add rice drained , water, vegetables, salt and butter 1 tbsp
pressure cook for 2-3 whistles, take care, that the rice isn't mashed, but grains must be separate but cooked
to the mashed potatoes, add salt little, cream, little pepper pdr. fold gently in one direction adding rest of the butter to the cooked rice.
serve with tomato raita or salted buttermilk

Health drink

Ingredients

curry leaves  1 cup ( you can use carrot, beets or dates instead)
grated coconut  1 cup
ginger a small piece
cardamom  1
jaggery/ brown sugar as required

Grind all the ingredients in a mixie, strain the juice
this is very healthy, as it is rich in vitamins, protein and fibre.

Carrot chutney

Ingredients
cumin  1 tsp
red chillies 2-3 or to taste
carrot 1 big chopped and blanched
tamarind little
salt to taste
oil 1 tsp

fry jeera and red chillies, add carrot and tamarind fry for a minute
cool and grind with salt and little water to a fine paste

this goes well with coriander rice, dosai, idlis, adai etc, it is healthy as carrot is rich in Vitamin A

Coriander Rice

Ingredients

boiled rice/ pulungal rice or normal rice 1 cup

for grinding
coriander leaves  1 cup
mint/ pudina a handful
ginger  a small piece
garlic 4 cloves ( optional)
green chillies to taste

for seasoning
ghee  2 tsp
cardamom, clove 1 each
cinnamon  1"piece

Method
add ghee in a pan, saute the spices and the ground paste, fry for 2 minutes
add 2 cups of water, salt and the rice, cook on low flame covered till rice is cooked, stirring in between. serve hot with raita of your choice and roasted papad

Stir fired idlis with veges

Ingredients

idlis
onion finely chopped  2
green peas  1/2 cup
carrot diced  1/2 cup
green chillies finely chopped to taste
salt to taste
asafoetida   2 pinches
curry leaves few finely chopped
mustard seeds  1/2 tsp
sesame seeds/ til  1/2 tsp
oil
coriander leaves  1 tbsp

Method

cut idlis into small pieces
blanch carrots and peas and keep aside
heat oil in a kadai/ pan, add mustard seeds, once it splutters, add sesame seeds, once they turn brown and give a nice aroma, add curry leaves, chillies and onion
fry till onion turns brown
add the blanched vegetables
add turmeric  salt and cook for 3 minutes
add the idli pieces and fry till idli pieces are well coated
garnish with coriander leaves ,serve hot

ps- when you're tired of eating plain, or when quite a few idlis are left over, you can change their form to make stir fried idlis, so, it will be eaten in a jiffy !

Mango Ricotta Cheesecake

Ingredients

Digestive biscuits  125 gm
butter  20 gm/ 4 tbsp
cream cheese  175 gm
powdered sugar   50 gm
mango puree  100 gm
eggs  3
vanilla essence  1/2 tsp
ricotta cheese  125 gm
yoghurt  125 gm
small mango cut into cubes

Method
crush the biscuits and mix with butter and spread evenly on base of 6 "round detachable ring mould. Leave to set in the fridge.
In a bowl, gently cream the cheeses, yoghurt, eggs, sugar, mango puree and vanilla essence together.
Add the mango cubes to it, pour mixture on the layer of digestive biscuits
Bake at 160 deg. C in a water bath for 50 minutes
let it cool, run a knife through the sides of the cake to demould from the ring, if it doesn't come out easily.
Chill the cake. garnish with sliced mangoes and slivered almonds or serve it plain !
