SAUCE FLAVOURED CUTLET

INGREDIENTS
breadcrumbs  400 gm
salsa sauce/ white sauce/ tomato sauce   5 tbsp
crushed corn 2-3 tbsp
boiled mashed potatoes  4 tbsp
onion  2-3 tbsp ( spring onion can also be used)
ginger-green chili paste to taste
garam masala 1/2 tsp
salt to taste
chili pdr. to taste
capsicum  2 tbsp
corn flour/ maida / rice flour slurry little
breadcrumbs to coat
oil for shallow frying

METHOD
in a big bowl, add bread crumbs, sauce, and the veges, seasonings, mix well with your hands.
shape into cutlets in desired shape, then keep in the fridge for 30 minutes
dip the prepared cutlets in corn flour slurry to coat well, then roll in bread crumbs to coat well, shallow fry in hot oil in a pan in medium heat, turning to sides, so that all sides are cooked evenly and brown.
serve hot with a spicy dip.
For the dip, you may use mayonnaise/ chili sauce  OR
thick curd, with chili sauce or green chutney.



Note- There is no hard rule about what sauce you want, you may add whatever seasoning you like. By chance you don't have sauce, I've also used if little left over dal, or kuttu( dal with vege), as I always like to use left-overs to make something different, as people with relish & eat it, without knowing that it is left over !

Egg-less banana nuts pudding

Ingredients
banana    6 big
almond pdr   75 gm
baking pdr   8 gm
baking soda  8 gm
honey 150 ml
whole wheat flour ( atta)  200 gm
brown sugar  200 gm
walnut 90 gm
oats pdr.   75 gm
oil 100+ 150 ml

Method

in a food processor, add chopped banana, almond pdr, honey blend well
add wheat flour, brown sugar, oats pdr., baking soda, baking pdr. & 100 ml oil, blend
add walnuts & remaining oil, blend slowly
grease a  dish,  pour the prepared batter, steam in a steamer, first high for 3 minutes, then lower the flame, steam for 20 minutes. Set for 5 minutes.
It can be eaten warm or cold, you can serve with chocolate sauce or if serving cold with some ice-cream !

Spciy baked flower

Ingredients
for dough
wheat flour 2 cups
 warm milk 3/4 cup
yeast  2 tsp
sugar 1 tbsp
butter 2 tbsp

For stuffing

salsa sauce  as needed
capsicum chopped  3 tbsp
onion chopped 3 tbsp
sweet corn 3 tbsp
cheese grated as needed


METHOD

for dough
in warm milk, add yeast, sugar, mix well and keep aside for 10-15 minutes to prove, that is you'll see bubbles on top.
add flour,butter to the milk mixture to knead the dough
cover the dough with a wet  cloth or plate and keep in a warm place to double
knead the dough again, by punching well to remove the air, take small portions, roll well
with a rolling pin, roll into a small circle
For the filling, mix with salsa sauce, the veges well, add cheese as needed reserving some to put on top of the prepared filling
put the filling in one side, fold into semi-circle, then bring the 2 edges together, you can make it stand, the top with the filling will be seen, no need to close it, put some cheese on top. 

Roll out all the dough in the same way, put the filling, then cheese, keep on a greased baking tray.
Bake in pre-heated oven at 180 deg. C for 15-20 minutes  or till light brown.
Note- you may put any filling that you like, in case, you don't have salsa sauce, use tomato sauce or even white sauce, which is easy to make. even the vegetables, use what you like and what you've.

Baked Apple roses

Ingredients
for dough

wheat flour  2 cups
warm milk  3/4 cup
dry yeast 2 tsp
sugar 1 tbsp
butter  2 tbsp


For apple jam
sugar 2 tbsp
apple grated 2 tbsp
fresh rose petals  2 tbsp ( optional) or use rose essence 1/2 tsp
citric acid 3 pinch


For rose
cut apple into half, remove the core, cut into thin semi-circles or you may grate also
put the apple slices in little water with lime juice, micro high for 30 seconds, drain the slices and keep

METHOD
for dough

in warm milk, add yeast, sugar, mix, leave it to prove for about 15 minutes
add flour, butter to the milk mixture, knead to a smooth dough, cover to double in size.
once the dough has doubled, punch it to remove air, knead well again.
Take some portion of the dough, roll well, then with rolling pin, roll into  not too thin rectangle, or you may roll as round, then cut long rectangle strips of about 4 " wide & 7-9 " long.


To make jam- heat sugar and apple well, till sugar has dissolved, then add rose petals if you've, or cook till thick, remove adding essence and citric acid. This jam can be stored in the fridge.
In the long strips, spread the prepared jam( which can be made once you knead the dough & before it proves). place apple slices over-lapping each other with about 1/2" slices seen outside the dough. after covering with apple slices on one side, fold the lower part roughly 1/3rd of it, then roll from one side tightly, with apple slices seen above. place the prepared rolls in a greased baking tray, bake in a pre-heated oven at 180 deg. C for about 10-12 minutes, take it out once the roses are light brown/ golden, sprinkle some powder sugar on them and serve hot/ cold. As once, they're baked, they'll look like roses.

Palak kichdi / spinach rice

INGREDIENTS
moong dal washed and soaked 1 cup
rice washed & soaked  1 cup
ghee 3 tsp
palak/ spinach puree  1 cup
nuts chopped 1 tbsp
turmeric pdr.  1/4 tsp
salt to taste
green chili-ginger paste 2 tbsp or to taste
cumin/ jeera 1 tsp
bay leaf 1
cloves 3-4

METHOD
Heat 1 tsp ghee in pressure cooker, add jeera, once it crackles, add bay leaf, cloves, add the soaked rice & dal, mix well adding salt to taste, add enough water cover & cook  for 2-3 whistles.
In a big pan/ kadai heat remaining ghee, fry the nuts, then add ginger-chili paste, fry well, add palak puree, add turmeric, cook for 3 minutes, on low flame stirring well, add rice and salt to taste, as rice and dal has salt, so check and then add as needed. Serve hot with tomato raita and roasted papad.

Baked soy-rice

INGREDIENTS
cooked rice 1 bowl with little salt
garlic 1 tsp finely chopped ( optional)
ginger finely chopped 1 tsp
onion 1 big finely chopped
soya granules 1/2 cup soaked in hot water for 10 minutes, squeezed
tomato 2 finely chopped
mixed herbs 1 tsp
chili pdr. / green chilies finely chopped to taste
salt to taste ( for the veges)
oil 2 tbsp
cheese grated 1/2 cup or as needed
white sauce or tomato sauce  1 cup
chili flakes to garnish


METHOD

in a pan heat oil, fry garlic, add ginger, green chilies, fry for a minute, add onion, fry till light pink, add tomatoes, salt and seasoning, fry till soft, add soy granules, mix well.
In a greased baking dish, spread rice, little sauce, then spread the soy mixture, spread the remaining sauce, top with cheese and chili flakes and little herbs,
bake in pre-heated oven at 180 deg. C for 10-12 minutes till cheese melts, serve hot


Notes-1)those who don't have soy granules, may soak chunks and then mince it in mixie
2)OR may use some mashed corn, you may add some mashed potato, capsicum or any vegetable of your choice too. Make it a complete meal with rice, protein and veges in it.

3) you may use one layer of white sauce and one of tomato sauce too.

POTATO-TOMATO KURMA

INGREDIENTS
FOR MASALA TO GRIND

jeera 1 tsp
pepper 1 tsp
kaskas / poppy seeds 1 tsp
coconut grated 1 cup
roast the first 3 ingredients well, grind with coconut to a smooth paste
For gravy
oil 1 tbsp
jeera 1/2 tsp
onion 1 ig chopped
tomatoes 3 chopped
potatoes boiled and chopped 1 cup
salt to taste
coconut milk 1/2 cup


METHOD
in a pan/ kadai heat oil, add jeera, once it crackles, add onion wee bit of salt, fry till light pink, add tomatoes, fry till soft, add potatoes, ground masala, salt , adding little water cook for 3-4 minutes on low flame, add coconut milk, cook for a minute in low flame, serve hot garnish with chopped coriander leaves, with rice / roti.

FRIED SESAME BALLS

INGREDIENTS
egg 1 or banana mashed -1 medium size
powdered sugar 1 cup
melted butter 3 tbsp
water little
wheat flour / atta 1 bowl
milk powder 2 tbsp
baking pdr. 1 tsp
baking soda 1 tsp
salt pinch
white and black sesame seeds mixed about 2-3 tbsp
oil for frying


METHOD
sieve flour with baking pdr., baking soda, milk pdr., salt well.
either egg/ banana beat well, add sugar, butter mix well, add the dry ingredients
add little water if needed to make a soft dough. cover the dough and rest for 20-25 minutes.
take out small portion of the dough, roll into a smooth ball, make a small cross-cut on top, dip the ball in little water, roll in sesame seeds, deep fry in medium hot oil till golden.
drain, sieve some castor sugar on top, serve.

FRIED PARANTHA

INGREDIENTS
maida  1/2 cup
salt little
oil 1 +1 tsp
oil for frying
ghee little
rice flour little


METHOD
mix maida with salt and 1 tsp oil well, add little water at a time to knead to a smooth, soft dough. add rest of the oil, mix well, cover and rest for 15-20 minutes.
take little dough, roll well into a smooth ball,then with a rolling pin, roll out into thin roti
spread ghee all over, spread rice flour over ghee well, press it down with your fingers. then make a cut like a radius, i.e., the cut must be made from centre to one side only.
then start rolling from the cut side around to form a cone. flatten the cone well between your palm. rest it for 15 minutes covered.
Roll parantha, put the parantha on a ladle, dip into hot oil, keep putting some hot oil over the parantha with another spoon, till it bubbles & you may find a little hole in the centre, don't fret, as that will happen, then fry till light brown on both sides, drain well, serve hot with some chutney and chana masala or whatever gravy you like.


Note- This is called Dhaka parantha.

Those who don't like it fried, may cook on tawa on medium flame with little oil, but may taste little different. It is like you can't have the cake and eat it too ! either fry if you're not bothered about calories and worried about taste only, if calorie conscious, then don't fry !

FLAVOURED PANCAKE PARANTHA

INGREDIENTS
for flavoured oil

oil 2 tbsp
garlic chopped / onion 1 tbsp
cloves 2/ saunf 1/2 tsp OR whatever flavour you like ( red chilies, cardamom)
for dough
maida 1 cup
salt little
hot water 2 tbsp
cold water as needed
To stuff inside
finely chopped green chili little
finely chopped spring onion little
sesame seeds little
spice pdr. little


METHOD
for dough

put maida and salt in a bowl, add warm water, mix with a spoon, then add little cold water, make a soft dough.add 1 tsp oil, knead well, cover and rest dough for 15 minutes.
strain the flavoured oil in a little cup
take small potion of the dough, roll well in your hands, then roll into square or round, spread some flavoured oil, little bit of green chili, onion, sesame seeds, spice pdr., roll it like a log, then make  the log into a circle, simply roll it around, press it well, roll into medium thick parantha.
cook the parantha in a hot pan on low flame, with oil till both sides are light brown, remove, crumble slightly with your hands when hot from all sides, serve hot with dal and vege of your choice.



Notes- those who don't like too spicy, can omit green chilies, use only spring onion, sesame seeds, spice pdr.
Flavoured oil can be stored and used for making noodles, and other  dishes too.

SOFT DOSA

INGREDIENTS
Idli rice 3 cups
plain rice 1 cup
black broken urad dal 1 cup
methi seeds 1 tsp
salt to taste

METHOD
wash & soak both rice together for 3 hours at least, grind to a smooth paste, remove
don't soak the dal, just wash it well twice and grind adding water so that it becomes soft & fluffy. mix with rice batter well adding salt. Leave it to ferment overnight or at least 6-8 hours. Heat a tawa, smear little oil, make as thin dosa as possible, put little oil, cook on medium flame covered, the bottom will be crisp & the top soft & porous. Remove, serve hot with chutney or sambar or milagai podi - the recipe, you can see in my blog.


Note- in case you're travelling, then you can take this dosa mixing milagai podi with enough oil & spreading it all over the dosa well. This will last for 2 days also & will be soft.

CORN PANCAKES

INGREDIENTS

corn boiled and drained 1 cup
besan / chickpea flour 1 cup
salt to taste
finely chopped spinach 1/2 cup
carrot finely grated  1/2 cup
spring onion 1 finely chopped or normal onion 1
green chilies finely chopped to taste or red chili pdr. to taste
turmeric pdr. 1/4 tsp
ghee for cooking
grated cheese as needed

METHOD
grind corn and besan to a fine paste adding enough water
add rest of the ingredients, mix well, add more water if desired.
heat non-stick tawa, smear little ghee, make small pancakes, cook in medium flame till brown on both sides, once you flip over for the other side to cook, spread some grated cheese on top, as the bottom gets cooked, cheese will melt, serve hot with chutney or ketchup.

MASALA IDLI

INGREDIENTS
idli batter  as needed

for stuffing
oil 2 tbsp
jeera 1/2 tsp
urad dal 1 tbsp
chana dal 1 tbsp
til 1 tbsp 
hing little
ginger finely chopped 1 tsp
green chilies finely chopped to taste OR use red chili pdr. to taste
curry leaves one sprig chopped
onion 1 big finely chopped
potato boiled, peeled and mashed 3/4
coriander leaves finely chopped 1 tbsp
turmeric pdr. 1/4 tsp
 salt to taste

METHOD
heat oil, add jeera, dals, fry till golden, add til , curry leaves, hing, ginger, green chilies
add onion fry till light brown, add turmeric pdr., mashed potatoes, salt and mix well
add dhania, mix well, remove, add lime juice if desired, cool and flatten like small tikki or vadai

for idlis
to make idli batter
idli rice  4 cups( if dal is good or use only 3 cups) Or Idli rava 2 cups & urad dal 1 cup
urad dal 1 cup ( if quality is good) 

TO MAKE IDLI
wash and soak rice and dal separately. grind rice coarsely, like fine rava/ suji, remove
grind dal well, adding enough water, so that it doubles in quantity.
mix dal with rice well, add salt, mix well, let it ferment over-night or 6-8 hours.
By chance idli batter hasn't fermented well, then add little Eno fruit salt, add 2 tsp water on top of it, mix well, so that it fluffs a bit and the idlis will come soft.
If using idli rava, wash rava, drain well, soak urad dal for 2 hours, grind well, add to washed rava, add salt and mix well, leave to ferment.

To make masala idli
put the cooker or idli vessel with water to heat on medium flame
grease the idli plates well, pour 1 tbsp batter on each idli mould, place one tikki, i.e. masala shaped flat, pour another tbsp of batter to cover it, steam for 12-15 minutes, when you prick in the centre of idli, it should come clean, then remove, serve hot with chutney.

APPLE-RAISINS PICKLE

INGREDIENTS
apple peeled and cored 2
raisins 3 tbsp
salt to taste
turmeric pdr. 1/2 tsp
chili pdr. 1/2 tsp or to taste
mustard seeds 1/2 tsp
oil 1 tbsp
water little
lime juice 1 tbsp or vinegar 1 tbsp

METHOD
chop apples into small pieces
heat oil, add mustard seeds, add apples, toss well, adding turmeric, chili pdr.
add raisins, salt and little water, mix well, let it simmer on low flame till the water dries up
in case you're using lime juice, squeeze the lime once you take it off the gas
but if you're using vinegar, add just before taking it off gas.
this pickle will go well with stuffed paranthas, bread toast too.

SPICY IDLI FRITTERS

INGREDIENTS
idli cooked cut into small pieces ( about 1 1/2")
onion chopped 1 cup
mustard seeds 1 tsp
urad dal 1 tbsp
hing little
 oil  2 tbsp
salt to taste

for masala
coconut grated  3-4 tbsp
jeera 1 tsp
green chilies 3-4 or as per taste
imli 1 tbsp
salt little
oil  1 tsp
curry leaves  1/4 cup

METHOD
for masala
heat oil, fry jeera, green chilies chopped, coconut well
take out, add imli, curry leaves
cool little and grind with little water and salt

For idli
heat oil, add mustard seeds, once it crackles, add urad dal, once golden, add hing, onion, fry till brown adding wee bit of salt
add ground masala paste, fry well for 3-4 minutes, stirring well on medium flame
add the idli pieces and little salt if needed, mix well, stirring on low flame till idli pieces are well coated with masala, serve hot with salted / sweet lassi.

ps- This is another good way to use left over idlis.

PUMPKIN / KADU VADAI

INGREDIENTS
idli rice 1 cup
yellow pumpkin grated 1 cup
chana dal  2 tbsp
curry leaves finely chopped
salt to taste
hing little
coconut grated 1 cup

METHOD
soak rice and dal separately for 3-4 hours
grind rice coarse, adding very little water, add pumpkin, coconut, dal, grind again coarsely
put in a vessel the thick dough, add salt, hing, curry leaves
heat oil, wet your hands and make thin vadas, deep fry in medium hot oil till crisp on both sides
drain and serve hot with chutney of your choice.

NUT-COCONUT BALLS

INGREDIENTS
ghee 1 tsp
sweet condensed milk 20o ml
desiccated coconut 200 gm
almond pdr. 1/2 cup
walnut pdr. 1/2 cup
cardamom pdr. 1 tsp
desiccated coconut little

METHOD
heat ghee, add condensed milk, mix well
add desiccated coconut, mix well
add the nuts powder, cardamom pdr., mix well
remove, cool little.
grease your palms with ghee, roll into small balls, roll in desiccated coconut and serve

BEET-COTTAGE CHEESE PARANTHA

INGREDIENTS
whole wheat flour / atta 2 cups
potato boiled, peeled & mashed 1/2 cup
beetroot parboiled and grated  1/2 cup
onion finely chopped 1/2 cup
cottage cheese / paneer grated or crumbled 1/2 cup
ginger-garlic, green chili paste 2 tbsp or to taste
sugar 1 tbsp
salt to taste
ghee 3 tsp for making dough
ghee for cooking
sesame seeds / til little for sprinkling on parantha

METHOD
in a big bowl, add flour and rest of the ingredients one by one, mixing  well after addition, last add 3 tsp ghee, mix well, add little water at a time to make a soft dough,
roll out dough to desired shape, sprinkle sesame seeds on top, lightly roll for the til to stick
heat a tawa, cook the parantha on both sides till they turn golden, adding little ghee
serve hot with pickle and curd.

ps- 1) you may use spring onion too instead of onion
2) garlic is optional 
this parantha makes a meal in itself, as it has all the necessary nutrients in it.

MEAL IN ONE

INGREDIENTS
rice soaked 1 cup
dals mixed ( arhar, moong, chana, masoor) 1 cup   OR you may use whatever dal you prefer, soak for a couple of hours
ghee 3 tbsp
onion 2 big chopped
carrot 1 chopped
peas 1/4 cup
cauliflower 2-3 tbsp
potato 1 big chopped
tomatoes 2 chopped
soya granules soaked in hot water for 10 minutes and squeezed  2 tbsp
capsicum 2 tbsp chopped
coriander leaves chopped 2 tbsp
kada masala ( bay leaf, cloves, cardamom, cinnamon)
jeera 1 tsp
turmeric pdr. 1/2 tsp
salt to taste
green chilies slit 3-4 or red chili pdr. to taste
cashew nuts fried for garnishing
garam masala 1 tsp
water 3-4 cups as required

METHOD
heat a pressure pan / cooker, add 2 1/2 tbsp ghee
once it melts, add kada masala, jeera, once aroma comes, add onion fry till light brown
add rest of the vegetables, seasonings, rice, dal, enough water to cook, mix well
cover and pressure cook  for 3-4 whistles
once the pressure is released, open, mix well adding coriander leaves and remaining ghee
serve hot garnished with cashew nuts, roasted papad and cucumber raita.
This makes a complete meal by itself, as it has carbs, proteins, minerals, vitamins.

ps- you may add vegetables of your choice and also you may add soya small chunks or omit them and add paneer.
even whole green moong dal can be used, after soaking it for a couple of hours along with chana & arhar dals.

Quick Masala Dosa ( no grinding)

INGREDIENTS

rice flour 1 cup
whole wheat flour ( atta) 1/2 cup
fine suji / rava  1/2 cup
salt to taste
water as needed to make the batter
oil for making dosa

For stuffing
oil 1 tbsp
mustard seeds 1/2 tsp
chana dal 1 tbsp
urad dal 1 tbsp
curry leaves few finely chopped
ginger finely chopped 1/2 tsp
green chilies finely chopped to taste
capsicum finely chopped 1
tomato finely chopped 2
paneer cut small or crumbled 2-3 tbsp
spring onion 1 finely chopped
coriander leaves finely chopped 1 tbsp
potatoes 2 boiled and mashed with seasoning of your choice 
water little
salt to taste
hing little

METHOD
mix all the ingredients for the batter and keep aside till you make the stuffing. At first, you may find the batter little watery, but it will get thick soon due to atta and rava. So, before making dosa, adjust the water consistency.

For stuffing
heat oil in a pan, add mustard seeds, once it crackles, add the dals, fry till golden, add curry leaves, hing, ginger, green chilies, fry lightly
add tomatoes, fry well for 2 minutes, add capsicum, spring onion, fry for another 2 minutes
add potatoes, paneer, little water and seasonings, cook till dry 
add coriander leaves, mix well, take off, add lime juice if preferred and keep aside.

Heat a non-stick tawa, smear little oil, spread batter and make dosa as thin as possible, spread little oil all around, once the bottom is brown and cooked well, spread the filling one side, fold and serve how with chutney of your choice.

ps- you may add peas, you may omit capsicum, add normal red onion instead of spring onion also. You can omit paneer, add soya granules soaked in water and squeezed well.

Some Useful Kitchen Hacks

1) To Make your cutlery shine again, clean them with a raw potato.


2) Porcelain crockery will be much shinier if you wash it in water with a little ammonia.


3)Crystal glasses shouldn't be washed in hot water- they can become opaque and covered in small cracks.


4) Glasses will me much cleaner and more transparent if you add some vinegar or coarse salt into warm warer when cleaning them.


5) Stained enamel can be bleached if you boil it with any cleaner and rinse it with hot water.


6) If burned food is stuck to a casserole dish, pour hot water into the dish and add a spoon of baking soda. Leave it to sit for a while and then boil it.


7) Frying pans will become cleaner if you boil 7 full ounce of water with the smae amount of viengar in them. Add baking soda, wait for the reaction to stop, and pour it all out. Then wipe and rinse the frying pan.


8) If some milk boiled over onto the hot stove, pour salt over the sill and cover with a wet napkin. Now the smell won't spread.


9) To get rid of lime scale in your kettle, pour vinegar and water ( 1:2) into it, close the lid and boil it, then wash it thoroughly.


10) Sift flour from time to time to keep it loose.

 
11) If you wipe a faucet with waxed paper, it won't be stained with water for a long time.


12) Knives and scissors are easier to sharpen if you first put them into a weak salt solution for half an hour.


13) To dispose off unpleasant smells in your fridge, wash it with water and lemon juive ( 1:1)


14) Unpleasant smells on your hands ( fish, garlic, onion etc) will disappear if you rub your hands with salt and wash them with soap.


15) A strong smell easily vanishes if you mix half a glass of water, 1-2 tbsops of peroxide, and 1 tbsp of any liquid cleanser. For e.g., you can apply this to a cutting board after preparing fish.


16) Get rid of garlic breath by chewing some parsley.


17) Fish smell disappear from pans when you rub them with salt and then rinse them.


18)  open windows and put 2-3 towels in different places in a room to banish tobacco smell.

 
19) Cutting boards won't smell of onion if you rub them with salt and lemon juice.


20)
Your cords won't get tangled if you keep then in toilet roll tubes.

Moong dal-jack-fruit seed halwa

INGREDIENTS
moong dal cooked 1 cup
jack-fruit seeds 8-10 cooked,( I cut the seeds in halves, put little water, cooked in micorwave for 6 minutes, its outer skin could be taken out easily, in some, skin had come out on its own)
Jaggery/ brown sugar 6-8 tbsp
ghee 2 tbsp

METHOD
you can soak moong dal for 2 hours and cook it over gas, adding enough water, as it cooks easily
once the jack-fruit seeds are cooked, it is easy to finely chop them with the outer brown skin
add the chopped seeds to the dal along with jaggery or brown sugar adding 1 tbsp ghee
keep stirring well, at the same time, mash the dal well. 
you may taste for sweetness, if you feel less, you may add some more jaggery / brown sugar
at last before removing from the gas once it thickens, add the remaining ghee, stir well
it can be served hot or cold.

It is full of proteins and iron.
