INGREDIENTS AND METHOD
Dry red chilies 10 soak in hot water till it softens
Heat 2 tbsp oil add
Chana dal 1 tsp
Urad dal 1 tsp
Jeera/ cumin 1 tsp
Methi dana1/4 tsp
Roast on low flame till golden add
Garlic 10 pearls peeled or as many as you like
Roast till nice aroma comes add
Red onion sliced 4 big, fry well add
Salt ½ tsp fry till shrinks and changes colour add
The soaked red chilies and tamarind a small lemon size or as per taste
Fry well for 2-3 minutes
Remove, once cool, grind to a smooth paste
Seasoning
Oil ¼ cup
Add mustard seeds 1 tsp once it crackles add
Urad dal 1 tsp
Curry leaves 2 sprigs chopped
Roast these well, add the ground onion paste,
Fry on low flame till oil is well absorbed add
Jaggery pdr 1 tsp
Salt ½ tsp or to taste
Turmeric pdr ½ tsp mix well
Cook on medium flame till it changes colour and oil starts separating
It can be stored for 3 months and as a side dish for 20 recipes
With roti, rice, idli, dosa, upma
