INGREDIENTS
for neer dosa
rice 1 cup wash well and soak for 4 hours/ overnight
salt to taste
water 1 1/2- 1 3/4 cups
for corn masala
corn 1/4 shelled ground to a paste with ginger, garlic, green chilies to a paste
corn kernels 1 cup
onion finely chopped 1 cup
green chilies finely chopped to taste
turmeric pdr 1/4 tsp
coriander pdr 1 tsp
red chili pdr to taste
oil 2 tbsp
jeera 1 tsp
ginger 1 tsp finely chopped
green chilies to taste finely chopped
garlic chopped 1/2 tsp ( optional)
curry leaves finely chopped 2 sprigs
coriander leaves 2 tbsp
METHOD
for neer dosa, if soaked for 4 hours, drain the water and add to the mixer jar, if soaked overnight, wash it well, then drain and add to the mixer jar with little water to grind to a smooth paste, add more water if needed to grind to a smooth paste, remove the paste to a bowl, add water in the mixer jar to remove all the paste and to the batter. Keep the batter aside for 30 minutes, then add salt to taste, mix well, check if you need more water.
this dosa is not made like the normal dosa, where you pour the batter and spread it with the ladle. In this, when you pour all around, you'll not spread it, there will be holes, that's how it is made, it is covered and cooked with very little oil used. It won't be crispy like the masala dosa.
For the masala
add oil in a pan, add jeera, once it crackles, add ginger, garlic, green chilies, curry leaves, fry well for 2 minutes, then add onion and fry well adding little salt. Once light brown, add the corn paste, mix well, adding 1 tomato finely chopped, mix well. Add the spices, add water more than a cup along with corn kernels, add salt to taste and half the coriander leaves, cover and cook till done, add rest of the coriander leaves on top for garnishing, serve hot with the neer dosa.
