Wash and soak lentils in warm water for
1-2 hours. Wash and soak rice in water for 15-20 minutes.
After soaking parboil lentils in water
for 8-10 minutes. Then drain water from it. Use this water further.
Drain water from the soaked rice too.
In a pan heat oil. Add sliced onions
and a little salt. Fry until the onion turns brown. Keep aside.
In a pan heat oil. Add cumin seeds.
Add chopped onion and a little salt. Saute until onion turns slightly
brown. Add crushed garlic and saute for some time. Add drained rice
and saute for 1-2 minutes.
Add lentils and saute for 1-2 minutes.
Add turmeric powder, red chili powder, black pepper, roasted cumin
seeds powder and salt. Mix well.
Add 2 cups of water (you can use drained
water of lentils). Cover with lid and cook on low flame. When it is cooked ans water as evaporated, add lemon juice and chopped coriander leaves. Mix gently.
Cover with lid again. Switch
off the flame. Keep it as it is for 10-12 minutes. Then serve.
Take lentil rice into a plate. Spread
fried onions and chopped coriander leaves on it. Enjoy delicious,
fulfilling lentil rice with curd and cucumber tomato salad.
