Rice roti + Green garlic- peanut chutney

 INGREDIENTS 

for rice roti

rice flour 1 cup

salt to taste

oil 1 tbsp

Boiling water 2 cups

for green garlic chutney

green garlic 1 bunch chopped

green chilies 8-10 or as per taste

peanuts 1/4 cup

oil 2 tbsp

urad dal 1 tbsp

hing little

tamarind 1 small marble size ( optional) 

salt to taste


METHOD

for roti-

boil 2 cups water adding salt and oil, add rice flour, keep cooking till it all comes together.

remove, knead well ( while hot, use the back of a cup/ katori to press the dough well, once cool to handle, then knead well by hand), cover and let it rest till you make the chutney

after resting, take dough a small ball to make roti, dust flour, roll it thin like roti

heat tawa, put the rolled roti on medium heat, with your hand dipped in water, dab water all over the roti

then flip it, you'll see it rising well, once both sides are cooked, remove serve with chutney. 

those who prefer, spread some ghee on top of roti.


For chutney

heat oil in a kadai, add urad dal and peanuts, roast well

add chopped green chilies and green garlic, keep frying well till it reduces to half, add tamarind if using when hot ( as then it is easier to grind) and is well cooked

then grind it by hand or in a mixer jar and serve with rice roti.

this chutney will taste well with bread toast, rice, idli, dosa, adai/
