Fried Jackfruit Balls

Ingredients:

 Jackfruit (ripe and de-seeded): 3 cups

Coconut scrapping: 1 cup

Jaggery: 1 cup

Cardamom powder: 1 tsp

Ghee: ½ cup + to fry

Idli batter: 2 cups

Salt: ¼ tsp


Method:

Steam jackfruit for about 10 minutes. Cool, peel the skin off and grind it coarsely.

Heat a pan and add the ground pulp of the jackfruit, coconut scrapping, jaggery, ½ cup ghee and cardamom powder.

Cook on a medium flame for about 10 minutes while continuously stirring.

The whole thing will come together as a single mass.

Cool and divide it into small balls.

In a bowl mix together idli batter and salt. Add enough water to thickly coat the jackfruit balls.

Take a jackfruit ball, dip it into the batter and gently fry it in hot ghee till golden brown.

Serve hot.

NOTE- Jackfruits are called super-foods because of the number of antioxidants that it contains. It does take an effort to peel and chop the vegetables. But savoring the mouth-watering yet healthy dishes is worth the effort.
