Classic Gluten-Free Buttermilk Biscuits

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp xanthan gum (if not included in the flour blend)
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and xanthan gum.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gradually add the buttermilk, stirring just until the dough comes together.
  5. Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick round.
  6. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until golden brown.
