Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp xanthan gum (if not included in the flour blend)
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, salt, and xanthan gum.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add the buttermilk, stirring just until the dough comes together.
- Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick round.
- Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until golden brown.
