Coriander chutney premix

Ingredients

Dried coriander leaves 1 cup

Dried pudina/mint leaves  ½ cup

Green chilies 6 or to taste roasted

Roasted gram dal / pottukadalai  2 tbsp

Dry ginger pdr  ½ tsp

Roasted jeera / cumin  ½ tsp

Salt to taste

Rock salt ½ tsp

Amchur pdr  ½ tsp

Note- it can be stored outside the fridge for 3 months.

Mix well all the ingredients, powder fine in the mixer and store in a dry container with a lid.

 

To prepare chutney

Take 1 cup of premix, add water as needed depending on how thick you prefer the chutney, mix well.

Season with 1 tsp oil, mustard seeds little, hing little, urad dal and chopped curry leaves, put it on top and mix well.
