Low calorie breakfast ideas

 Breakfast is the most important meal of the day. It must provide enough nutrients to help us carry on with our work well. It is very important for children to help them concentrate what the teacher is teaching in the class. You may often find some children are sleeping or looking very tired in the morning itself. If you ask them, you'll come to know that they've not had a meal since last night. Without energy, how will the brain work? That's the reason that the Indian government has started the mid-day meal scheme in all government schools. Most children come to school to at least get one proper meal a day.

Some nutritious breakfast foods are-

Poha, made with flaked rice. It can be made with very nutritious by adding along with onion, potato, carrot, peas, peanuts, curry leaves, coriander leaves, cauliflower, beans and last squeeze some lemon juice in it after taking off from the gas. Never squeeze lime when the food is on the gas, as the vitamin C is lost then. Flaked rice is rich in iron, hence to absorb the iron from it, you need Vitamin C. It can be add with some curd to get more protein, as our body absorbs milk protein easily.

Oats Upma- this again is not only full of fiber, but nutrients, zinc is there in oats along with other nutrients. By adding veges and nuts, one can have a very filling breakfast.

Idlis- it is the best steamed food, highly nutritious, as it has carbs, protein, being fermented, protein is enhanced, then prebiotics, easily digestible, having with sambar and chutney makes it a complete meal, as sambar has dal and veges, chutney has dal, coconut, green chilies- so you get most Vitamins A from carrots and pumpkin in sambar, B in dals, green chilies C, curry leaves E.

Vegetable dalia- this is made from broken wheat, lots of protein, fiber, vitamins with veges in it. 

Ragi dosa- dals= B complex, ragi- calcium and iron, with chutney and sambar will make it a complete meal. You can make it stuffed with some veges, onion, or add some paneer and tomatoes with green chilies, to make it a very filling breakfast.

Oats idli, rice roti, stuffed rotis- paneer, carrot, potato n peas and so on. Or palak/ methi roti.

All the above can be made with very less oil, very filling breakfast, that will help one to concentrate on their work/ studies till lunch time

Chocolate- Layered Burfi with Milk Powder

 Ingredients

plain burfi layer

  • 2 cups mawa
  • ¼ cup cream
  • cup sugar ½ cup if you want the base to be more sweet
  • 2 tablespoon ghee

chocolate layer

  • 1 cups mawa
  • ¼ cup cream
  • ¼ cup cocoa
  • 3 tablespoon sugar
  • 1 tablespoon ghee

Instructions

For the plain burfi layer

  • Heat mawa in a pan. Add cream and sugar and cook while stirring slowly.
  • Keep cooking on slow heat and add ghee to it.
  • Cook until it comes together to form a smooth mix. It will resemble condensed milk.
  • Remove and spread it evenly on tray lined with baking sheet or butter paper. Mawa barfi is ready.

    for the chocolate layer

    • Mix the cream with the cocoa powder in a bowl.
    • Heat mawa in a pan with the chocolate cream ,sugar and ghee.
    • Mix all the ingredients and cook until it forms a homogeneous mix.
    • Remove and spread it evenly on tray that has the plain burfi base already spread out.
    • Press evenly to form barfi,let it rest for 3-4 hours or overnight.
    • Cut into desired shapes,keep refrigerated.

Orange Cupcakes

 Ingredients-
➛1/2 cup (227grams/4 Oz) butter, softened
➛3/4 cup (150grams/ 5.3Oz) sugar
➛Zest of 2 oranges
➛2 eggs
➛1/2 cup (120ml) sour cream (non-fat, light or regular)
➛1/4 cup fresh orange juice
➛1-1/2 cup (204grams/7.2Oz) flour
➛1 tsp baking powder
➛1/2 tsp salt
➛1/2 tsp baking soda


Preparations

Cream the butter, sugar and orange zest on medium speed for 2 minutes, until light and fluffy.

Add the eggs, 1 at a time. Then add the sour cream and orange juice.

Mix the flour, baking pdr, salt and baking soda in a small bowl.

Add the dry ingredients to the wet ingredients till well combined.

Scoop the batter into the prepared muffin pans, bake for 18 minutes. Let the cupcakes sit in the pan for 10 minutes, then transfer to a rack to cool completely.

Glaze or dust with powdered sugar and serve.

Eggless Mawa Sooji Cake

 Ingredients

  For The Mawa:

  Milk Powder – 200 gm

  Amul Fresh Cream – 250 ml

  • For The Cake 
  • 275 g Chiroti Rava / Fine Sooji
  • 100 ml Yogurt / Curd
  • 140 g Mawa
  • 100 ml Milk
  • 11/2 tsp Baking Powder
  • 1 tsp Cardamom Powder
  • 150 g Sugar
  • 100 g Butter
  • Nuts – a handful

Instructions 

Making The MW( microwave) Mawa:

Mix together milk powder and cream and make a smooth batter.

MW it on high for a minute.

Remove and give a stir.

Again MW on high for a minute.

Remove and give a stir.

Repeat these two steps until the mawa is thick and of perfect consistency.

Cover and allow it to cool completely.

 For The Cake:

 Preheat oven to 160°C.

Grease, line and dust a 7″ square tin and keep it ready.

In a bowl mix together melted butter, sugar and mawa and beat until well combined.

Add in yogurt, milk and cardamom powder and beat well.

Add baking powder and beat until incorporated.

Add the fine chiroti rava and mix it well with a spatula.

Transfer batter to the prepared cake tin and top it with chopped nuts.

Bake in preheated oven for 45 – 55 minutes.

Check with a tooth pick and see if it comes out clean.

Cover the cake with an aluminum foil and allow it to sit for two to three hours.

 Now flip the cake on top a chopping board, remove the lining paper and flip it back so that the nuts comes to the top.

Slice it up into cubes and serve.

Mango-coconut laddu

Ingredients

mango peeled and cut 2 cups

sugar 1 cup

milk powder 1 cup

desiccated coconut 1 cup

ghee 1 tbsp +

 

Method

In a mixer jar add mango, sugar, milk powder, grind to a smooth paste

heat 1tbsp of ghee in a heavy pan/ kadai, add the mango paste, cook in medium flame stirring till it leaves the sides of the pan. Add desiccated coconut, mix well, adding chopped nuts if you desire.

let it cool slightly, make laddus, you may roll in desiccated coconut and keep a nut on top and press it down to garnish your yummy laddu.

Bread Pakora

 INGREDIENTS

for stuffing

oil 2 tsp

urad dal 2 tsp

chana dal 2 tsp

green chilies to taste

coriander leaves chopped 1=2 tbsp

potatoes boiled and mashed 2 cups 

salt to taste

hing little

turmeric pdr 1/4 tsp

bread slices as needed


for batter

besan 1/2 cup

rice flour 1/4 cup

salt to taste

turmeric pdr 1/4 tsp

red chili pdr 1 tsp or to taste

hing little

oil for frying


METHOD

for stuffing

heat a pan/ kadai add oil, add the dals, once golden, add hing, green chilies fry for a minute

add turmeric pdr, potatoes mix well, add salt, add coriander leaves mix well, remove and cool


on a slice of bread, spread enough stuffing, cover with another slice, cut into a triangle

add the flours, salt, spices with water to make a thick batter, enough to coat the bread well.

dip the slices of bread in the batter, coat it well, slide in hot oil, fry till golden, drain on kitchen towel/ paper napkins, serve hot with chutney of your choice and tea.
