Jub-Jub Jelly candy

I think to eat a jub-jub, there's no age bar, who doesn't love it? I never knew that it was so simple to make them. You can make any fruit which you can make juice or a puree, the more colourful the fruit, the better it is !

Today in the cookery show, I learned to make jub-jub with dragon fruit and kiwi.

Just peel the fruit, maybe 3 kiwis, and puree it, keep it in a bowl.

Cut the dragon fruit in half, then each half, cut again into another half, then you can just peel the skin, then cut the dragon fruit into rough pieces and puree it. Dragon fruit comes in 2 colours, this one was bright pink and in white too.

Now heat 2 pans, In 1 pan, add 1 cup water to which 120 gm of sugar and about 1 tbsp of lime juice. Let the sugar dissolve and boil a little.

In the other pan, heat 2 cups of water, to which you add 4 tsp of agar-agar, keep whisking it, as it will thicken, once it cools, it thickens more, but we need to keep it warm till the sugar one gets done.

Now when the sugar has boiled well, pour it over agar-agar, whisk it well. Now, we've to divide this sugar mixture between the 2 bowls- kiwi- dragon fruit. Keep pouring roughly equal quantities in each, but little more in dragon fruit, as its quantity is more.

Now, slightly oil 2 square pans, to which you can pour the kiwi mixture in one and the dragon fruit in the other. 

Now, you need to refrigerate it overnight, not in the freezer !In  the morning, you can cut it into small pieces and serve. It had such a lovely natural colour, the most healthy one and pleasing too.

Now you can go ahead and try with different fruits in the same way, enjoy your own jub-jub, if you want, you can sprinkle some sugar on top, like in stores.
