Pineapple Layer Cake with Whipped Cream Frosting

Ingredients:
For the Cake:

All-purpose flour, 2 1/2 cups
Baking powder, 2 tsp
Baking soda, 1/4 tsp
Salt, 1/2 tsp
Unsalted butter, room temperature, 3/4 cup
Vegetable oil, 1/4 cup
Sugar, 1 1/2 cups
Eggs, 4 large
Crushed pineapple (with juice), 16 oz
Vanilla extract, 1 tsp


For the Pineapple Filling:

Sugar, 1/3 cup
Cornstarch, 1 1/2 tbsp
Crushed pineapple (with juice), 8 oz
Water, 2 tbsp


For the Whipped Cream Frosting:

Heavy whipping cream, cold, 3 1/2 cups
Powdered sugar, 1 1/2 cups
Vanilla extract, 1 tbsp
Dried pineapple slices for decoration


 Instructions:

 
Bake the Cake: Mix dry ingredients, cream butter with oil and sugar, then add eggs, crushed pineapple, and dry ingredients alternately. Divide into 3 pans and bake.


Prepare the Filling:
Cook sugar, cornstarch, pineapple with juice, and water until thickened. Chill completely.


Whipped Cream Frosting
: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.


Assemble the Cake:
After cakes cool, layer with pineapple filling and whipped cream frosting. Decorate with whipped cream swirls and dried pineapple slices.
