Breakfast is the first meal of the day and
it has to provide you with enough nutrition for at least a few hours. If

Ingredients for Tacos With Chorizo and
Crispy Potatoes:
Chorizo sausage - 8 oz (diced)
This vegan chorizo
is seriously simple! It starts with draining the liquid from a block of
extra-firm tofu and then breaking up the tofu until it becomes a
crumbly texture. Then we mix it with smoked paprika and cumin for
smokiness and cayenne pepper for heat.
Large potato - 1 (cubed)
White vinegar - 2 tbsp.
Oil - 1 tbsp.
Unsalted butter - 2 tbsp.
Scallions/ spring onion - 2 (chopped)
Eggs - 6
Milk - 2 tbsp.
Small flour tortillas - 8
Cheddar cheese - 1/2 cup (grated)
Hot sauce - for serving (optional)
Avocado - for serving (sliced)
Cilantro - for serving (chopped)
Salt and Pepper - as needed
Method of preparing the Tacos With Chorizo and Crispy Potatoes:
Cook the potato cubes in water with vinegar, and salt. Once boiling,
reduce to a simmer.
When the potatoes are tender, drain and set aside.
Fry the chorizo cubes until brown, about 5 minutes on each side.
Transfer to a bowl and set aside.
Remove the chorizo from the pan, and cook the potatoes in the
chorizo fat until golden and crispy.
Season with salt and pepper.
Add scallions and a tablespoon of butter. Cook for 5 minutes and
transfer to the chorizo bowl.
Combine eggs, milk, a pinch of salt, and pepper in a bowl.
Heat your
tortillas in a dry pan over medium heat until lightly toasted.
Fry the egg mix with the rest of the butter until barely set.
Add
the chorizo mix and cook for another 2 minutes.
Pile the mix in the center of each tortilla, add your toppings of
choice, fold in 2 and serve.
