Healthy tiffin ideas for vegetarians

Quinoa salad with chickpeas and avocado-Cooked quinoa mixed with chickpeas, diced avocado, cherry tomatoes, cucumber and a lemon-tahini dressing.

Lentil soup with whole grain bread- A hearty soup made with lentils, vegetables and spices, served with a side of whole grain toast or bread.

 Tofu stir fry with vegetables- Cubed tofu-stir fried with a variety of colourful vegetables such as bell peppers, broccoli, carrots and snow peas, seasoned with soy sauce and ginger.

Black bean Tacos- Soft corn tortillas filled with seasoned black beans, salsa, diced avocado, shredded lettuce and a squeeze of lime.

Chickpea salad sandwich- Mashed chickpeas mixed with diced celery, red onion, vegan mayo, Dijon mustard, spices, serve on whole grain bread with lettuce and tomato.

Greek yogurt parfait- Greek yogurt layered with fresh berries, granola and a drizzle of honey for sweetness.

Vegetable and Bean chili - A hearty chili made with a mix of beans ( such as kidney beans, black beans and pinto beans), tomatoes, onion, bell peppers, corn and chili spices.

 Eggplant and lentil curry - A flavourful curry made with eggplant, lentils, coconut milk, tomatoes and curry spices, served with brown rice or naan bread.

Spinach and feta quiche- A savoury quiche made with a whole wheat crust, eggs, spinach, feta cheese, onion and herbs.

Veggie burger with sweet potato fries- A home-made or store-bought veggie burger made with ingredients like black beans, quinoa and vegetables, served on a whole grain bun with lettuce, tomato, and avocado alongside baked sweet potato fries.
