Veg Akki Roti- vegan recipe

Normally akki roti most people makes using just rice flour with some spices, but this has loads of veges, full of nutrition.

TIP - whenever you knead a dough having rice flour, use warm water, as then the dough will be soft.

INGREDIENTS

rice flour  1/2-3/4 cup

warm water to knead, then only the dough will be soft.

salt to taste

jeera/ ajwain 1/2 tsp

cabbage finely chopped 3 tbsp

carrot finely grated 3 tbsp

spinach finely chopped 3 tbsp

green chilies  finely chopped to taste

ginger finely chopped / grated 1 tsp

turmeric pdr a pinch

oil 2 tsp

 

METHOD

mix veges , spices, rice flour, oil well, the add warm water to knead a soft dough.

this roti is not rolled with a rolling pin, but with hand on a banana leaf of plastic sheet by smearing little oil on hand and on the leaf/ sheet. Take a small ball, spread with your fingers and palm to small rotis.

Heat a tawa, cook the roti, till brown spots come on both sides.

Once cooked, smear some ghee on it. 

This is best served with a gravy having protein as this has carbs and fiber with minerals and vitamins.
