Ingredients:
2 cups whole milk
1/2 cup sweetened condensed milk
1/4 cup chopped nuts (almonds, pistachios, cashews)
1/4 tsp cardamom powder
Saffron strands (optional, for color and flavor)
Directions:
In a heavy-bottomed saucepan, heat the whole milk over medium-high heat until it comes to a boil.
Reduce the heat to low and simmer the milk, stirring frequently, until it reduces to about half its original volume (approximately 20-25 minutes).
Add sweetened condensed milk, chopped nuts, cardamom powder, and a few saffron strands (if using). Mix well.
Continue to simmer the mixture for another 5-7 minutes, stirring constantly, until it thickens to a custard-like consistency.
Remove from heat and let the mixture cool slightly.
Pour the kulfi mixture into popsicle molds or small cups.
Insert popsicle sticks into the molds (if using).
Place in the freezer and let it freeze for at least 6 hours or overnight.
To serve, run the molds briefly under warm water to release the kulfi. Garnish with additional chopped nuts and saffron strands if desired.
