Egg-less Malai / cream cake

 Ingredients

 70 gm Malai / cream from top of the milk
100 gm All Purpose Flour / maida
50 gm Semolina / suji / rava
100 gm Powdered Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Vanilla Extract
60 gm Tutti Frutti
60 gm Milk
Pinch of Salt


Instructions

In a bowl mix malai and sugar. Whisk it well until sugar dissolves.
Add semolina, sifted flour, baking powder, baking soda, salt, milk and vanilla extract. Mix all the ingredients.
Add tutti frutti to the batter and gently fold it.
Pour the prepared batter into a greased cake tin.
Sprinkle some tutti frutti on top and tap the baking tin on the counter.
Bake this in a preheated oven at 180 °C for 20-25 minutes.
Once baked, take out the cake from the oven and let it cool for 5 minutes before demoulding.
Delicious, moist, tender and loaded with the richness of malai, my Mom's special Eggless malai cake is ready.
