This recipe can be an accompaniment to any rice dish or it can be had as a snack.
INGREDIENTS
Lotus stem peeled, cut into 2" long slices, wash well , drain and keep
it has to be vertically cut into half
For stuffing
potatoes mashed 2-3
salt to taste
turmeric pdr 1/2 tsp
chili pdr 1 tsp
dhania pdr 1 tsp
jeera pdr 1/2 tsp
garam masala pdr 1/2 tsp
hing little
for coating
besan 1/2 cup
rice flour 1/2 cup ( I always use rice flour when frying with besan to give crispness to fried dish and also healthier than having only besan)
salt and chili pdr to taste
hing little
water to make a thick batter
oil for frying
METHOD
all the ingredients of stuffing, mix well, you may add little coriander leaves too. Stuff on one side of the cut lotus stem, cover with the other.
Mix all the ingredients for coating, dip in the batter and fry in medium hot oil till golden, drain and serve.
