INGREDIENTS
butter 4 tbsp
maida 4 tbsp
milk 350 ml
spinach chopped 1 cup
boiled corn 1 cup
oregano 1 tsp
chili flakes 1tsp
pizza seasoning 1 tsp
processed cheese grated 1 cup - more/ less is your choice
breadcrumbs 1/2 cup + to coat the balls to fry
Mozzarella cheese small pieces as needed
METHOD
In a pan, heat butter, add maida, stir well, till it changes colour
add milk, little at a time, stirring well, so no lumps are formed
Once the white sauce is cooked and thick, add spinach and corn with salt, mix well.
add oregano, chili flakes, pizza seasoning, grated processed cheese, mix well.
you may add 1/2 cup breadcrumbs to bind the mixture, once slightly cool, keep the mixture for at least 30 minutes in the fridge to harden
take small portion of the mixture, flatten it, put a small piece of Mozzarella cheese, cover it well from all sides, once all the balls are similarly prepared, coat the balls in maida slurry, then in breadcrumbs, repeat this process do get a nice crispy covering
fry in medium hot oil till golden in colour.
serve hot with chutney/ ketchup/ sauces/ dip of your choice.
