Instead of having dal and puri, why not combine both together, have with pickles, curs and some gravy !
Ingredients
moong dal washed and soaked for 2 hours, then drained
oil 2 tbsp +1 tbsp= dough
ginger-garlic-green chili paste 2 tbsp
chaat masala 1 tsp
turmeric pdr 1/4 tsp
coriander leaves chopped 2 tbsp
coriander pdr 2 tsp
jeera pdr 1 tsp
red chili pdr 1 + 1( dough) tsp
salt to taste
whole wheat flour 2 cups for dough
water as needed to make dough
oil for frying
hing 1/4 tsp
Method
in a pan, heat 2 tbsp oil, add hing, after few seconds add the green chili-ginger-garlic paste, fry well for a minute, add the dal and the dry masala pdr, mix and mash the dal little as you keep stirring, so that it can quickly dry up and easy to stuff, when mashed, add last coriander leaves, mix well, remove and cool.
for dough- add atta, salt, oil, ajwain, red chili pdr mix well, add water to make a slightly stiff dough, spread some oil on top, cover and keep aside for 15 minutes.
Take a big lemon size ball of dough, flatten like a puri, put enough stuffing, close it well, then roll out slightly thick puris using atta for dusting or with oil.
fry the puris in medium hot oil, till it puffs up and golden, drain and serve hot, with some gravy, pickle and raita, to make a complete meal.
