7 Ways to reuse leftover mixed vegetable sabzi

 It is very difficult to make the exact amount of food at home, as often either one over eats or one doesn't eat. Leftover foods invariably only mothers eat in Indian households. So, here are some ways to use the leftover and give it a new twist, so all would crave for it.

Stuffed Parathas:

Mash the leftover sabzi and use it as a stuffing for parathas. Roll out the dough, place a spoonful of sabzi in the center, seal it, and roll it out again gently. Cook on a hot skillet with ghee until golden brown. Serve with yogurt or pickle.


Sabzi Pulao:

Make a quick and flavorful pulao by mixing the leftover sabzi with cooked rice. Add some whole spices like cumin seeds and whole cloves for extra flavor and adding garam masala. Heat through and serve hot with raita and roasted papad.

 

Sabzi Sandwiches:

Spread butter or mayonnaise on bread slices and layer with the leftover sabzi. Add cheese slices or any other preferred toppings like lettuce or tomatoes. Grill or toast the sandwich until crispy and golden.

 

Sabzi Frittata:

Whip up a quick frittata by mixing beaten eggs with the leftover sabzi. Pour the mixture into a hot, greased pan and cook until the eggs are set. Top with cheese and herbs for extra flavor.

Vegetarians can   mash the veges well, chop some onion fine, add rice flour and besan to make a batter like for onion pakoras adding some salt and green chilies and coriander leaves chopped, fry them in hot oil.

 

Sabzi Soup:

Blend the leftover sabzi with some vegetable or chicken broth to make a hearty soup. Season with salt, pepper, and herbs. Serve hot with a slice of bread or croutons.

 

Sabzi Quesadillas:

Spread the leftover sabzi on a tortilla or roti, sprinkle with cheese, and top with another tortilla. Cook on a hot skillet until the cheese melts and the tortillas are crispy. Serve with salsa and sour cream.

 

Sabzi Salad:

Use the leftover sabzi as a topping for salads. Mix it with fresh greens, cherry tomatoes, cucumbers, and a dressing of your choice. Add some nuts or seeds for crunch and protein.
