Ingredients
1 cup poha/ flattened rice, wash it well, keep it in a colander, for water to drain, use thin variety
3 boiled potatoes
1 carrot grated
½ tsp ginger finely chopped
2 green chilies finely chopped, or as per taste
1 tbsp fresh coriander leaves finely chopped
2 tbsp rice flour
½ tsp red chili pdr
½ tsp cumin/jeera powder
½ Lemon juice
1 cup oats powder
2 tbsp cornflour
salt to taste
oil for shallow frying
Method
1.Transfer the poha in a large bowl and mash it well to form a soft dough.
2.Now add boiled potatoes and mash those too. It will form a soft dough like consistency.
3.Further add all the finely chopped veggies- carrot capsicum, ginger, green chilies and fresh coriander. Further add all the dry spices- red chili powder, cumin powder,lemon juice and salt. Mix till everything is well combined.
Add rice flour and fresh coriander and mix well. The cutlet mixture is ready.
3.Now take some prepared mixture and give them round cutlet shape.
4.You can make the cutlets as big or small accordingly to your preference.
5.For coating the poha cutlets we need oats powder and slurry.
6.Take make the corn flour slurry, in a bowl add corn flour and water and mix well. It will have a runny consistency.
7.Now take each cutlet at a time and dip it into the slurry. Then immediately coat it with the oats powder.
8. Make sure it’s coated well from each sides. Similarly coat the rest of the poha cutlets.
9.In a pan over medium flame add oil and once it turns hot add the oats and poha cutlets in it. Shallow fry them for around 2 minutes on each sides or until it turns golden and crispy.
NOTE- if some poha you had made for breakfast is leftover, you can use it also to make cutlets like this,you may need to add boiled potatoes, veges and make.
ps- whenever there is place in my pressure cooker, I used to add some potatoes to cook along with rice and dal. Wash well the potatoes, cook with the skin, let it cool, keep it in the fridge to be used whenever needed quickly to make cutlets or to add to any veges, or while making upma. Don't peel the skin of the potatoes till you need.
