Ingredients:
2 ripe bananas, mashed
1 cup rolled oats
1/2 cup almond butter (or any nut butter of your choice)
1/4 cup unsweetened shredded coconut
1/4 cup chopped nuts (like almonds or walnuts)
1/4 cup dried fruit (like raisins or cranberries)
1 tsp vanilla extract
1 tsp cinnamon pdr
Pinch of salt
Method
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine mashed bananas, almond butter, vanilla extract, cinnamon, and salt.
Stir in rolled oats, shredded coconut, chopped nuts, and dried fruit until well combined.
Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them apart.
Flatten each cookie slightly with the back of a spoon.
Bake for 12-15 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
