Egg-less saffron-dry fruits cake

Ingredients

Sugar 200 gm

Oil  75 ml

Buttermilk 240gm ( milk 235 gm + 5 gm vinegar)

Saffron strands 10-12

Cardamom pdr  1 tsp

Maida  180 gm

Baking pdr  12 gm

Nuts n raisins as you desire 1/4 cup- more/ less

 

Method

Mix milk  and vinegar and keep aside for 10 minutes, if using instead of buttermilk

In a bowl take sugar, oil, buttermilk and beat well. Then add all dry ingredients and mix well. Add chopped dry fruits.

Pour batter in a lined tin, garnish with some chopped dry fruits/

Bake at 170 deg. C for 35-40 minutes or till done/
