Ingredients
Poha/ chiwda 1 cup
Suji/ rawa 1 cup
Curd 1 cup
Salt to taste
Baking soda ½ tsp
Coriander leaves 3 tbsp chopped
Mustard seeds 1 tsp
Jeera 1 tsp
Turmeric pdr ½ tsp
Green chilies 1 -2 finely chopped
Oil 1 tbsp for seasoning
Onion 1 chopped fine ( optional)
Carrot grated 1
Method
Wash poha well, then soak in just enough water to make it soft and mash it
In a big bowl add rava, curd and salt mix well and let it rest for 20 minutes
To the above mixture, add the mashed poha, mix, add some water if the batter is too thick
In a kadai, heat oil, add mustard seeds and jeera, once it crackles, add green chilies, chopped onion, fry till it is light pink, add turmeric, mix well, add grated carrot, mix well along with coriander leaves, add to the batter along with baking soda.
Grease idli plates , keep the pressure cooker or idli steamer with water to boil, pour the batter in idli plates, steam for 10-12 minutes. Remove, rest for 1 minutes, then remove from idli plates, serve hot with coconut chutney, milagai podi, or any chutney of your choice.
ps- you can add nuts if you prefer after mustard and jeera crackles along with chilies, then add onion and fry.
