Easy way to Jelabi at home

INGREDIENTS

maida  1 cup

curd  1/2 cup

baking pdr 1/4 tsp

water as needed

ghee/ oil for frying

 Syrup

sugar   1 cup

water  1/2 cup

kesar pdr a pinch

cardamom pdr  1/4 tsp

lime juice 1/2 tsp

 

METHOD

to make the batter, add maida, curd, baking pdr in a big bowl and  mix well

add little water and keep whisking well, so no lumps are there, make a thick batter

cover and rest the batter for 6-8 hours

To make sugar syrup

add sugar and water in a well, cook on medium flame stirring often

once the sugar has dissolved, had kesar pdr, make 1 string syrup

 switch off the gas, add cardamom pdr and lime juice, so no crystals form

To fry the batter

has the batter would have fermented, beat the batter well

heat ghee / oil in a kadai

put the batter in a sauce bottle, or zip lock or in a cloth - if using the last 2 , make a small slit in the corner to make round jalebis, fry in medium hot oil till golden and crisp, soak in syrup for 2-3 minutes remove and serve hot jalebis.
