Puranam like for the traditional one
for outer covering
Maida 2 cups
ghee 2 tbsp
salt a pinch water to knead
Make the dough like for roti. Roll out big like for roti, then cut into pieces of roughly 3" squares, even if it is odd shaped no problem, as you can still stuff & make kolakkattais.
Put the stuffing of puranam in it, fold from sides making sure that it is well sealed, or else when you deep fry, puranam will come out & spoil your oil.Deep fry in hot oil, but on medium flame.
ps- whenever you're frying sweets, the oil should be hot, but once you put the ingredients to fry, then lower the heat, or else the inside won't get cooked well, outer shell will be burnt.
This kolakkattai lasts for many days, no need of keeping in the fridge.
