Vegetable kurma/ gravy




Vegetable kurma

Peas 1 ½ cups
Cauliflower 1
Carrots 2
Potatoes 2
Onion 1
Tomatoes 2
Oil 1 tbsp
Coriander seeds ½ tbsp
Fennel seeds 1 tbsp
Chilies 5
Ginger 1 small piece
Fresh coriander 1 bunch
Garam masala 1 tsp
Cloves 4
Cardamom 2
Cinnamon 1 small piece
Salt to taste

 Grind together
Onion 1, poppy seeds 2 tsp, turmeric ½ tsp, coriander pdr, chilies, ginger, coriander leaves, gram masala.
Grind 3 tbsp coconut separately.


Method
Wash & cut the vegetables into small pieces. Fry 1 onion well.
Heat oil, add cloves, cardamom, cinnamon & fry well, add the fried onion, add the ground garma masala & fry well.
Then add the vegetables, cook till the vegetables are done, then add ground coconut, salt & water as needed, let it boil well.
Garnish with fresh coriander leaves.

Ps- this goes well with roti, puri & peas pulao.
