kurukku kaalan

buttermilk 7-8 glasses
raw bananas 2
yam 1/2 kg
turmeric pdr 1 tsp
salt & pepper pdr to taste
coconut oil for tempering
mustard seeds 1 tsp
fenugreek seeds 1/2 tsp
red chilies 2
curry leaves

for grinding
coconut grated 1/2
cumin seeds 1 tbsp
green chilies 3-4




beat 7-8 glasses of sour buttermilk, mash lumps & heat in a heavy vessel.
add turmeric, red chili pdr, curry leaves & pepper pdr.
let this cook, stirring every now & tehn till it has reduced to half.
( don't add salt as it will turn the mixture watery).
ass jaggery syrup & stir well.
pressure cook moderatley big sized chunks of 2 raw bananas & 1/2 kg of yam, adding salt, turmeric pdr, red chili pdr & pepper pdr for 2 whistles.
add the vegetables to the reduced gravy ^ stir.
let this simmer.

grind 1/2 a coconut grated with 1 tbsp of cumin & 3-4 green chilies with hot water to a smooth paste.
add the ground mixture to the boiling gravy & stir well.
in a wok, heat a little coconut oil, add mustard seeds, when it splutters, add fenugreek seeds & red chilies.
finally add curry leaves & stir fry.
add the tempering to the gravy & stir well.

ps- the buttermilk used must be sour for best results. this goes well with hot rice.
